Chicken Pot Pie IX

Beware if you are not efficient at baking pies and making gravy with flour/broth. I followed the majority of the reviewers advice, and while the taste was great, the execution of this recipe turned into kind of a nightmare. The filling is way too much for one 9" crust. Baking the crust to eliminate the sogginess shrinks the bottom crust too much to seal the edge. It doesn't come out of the pie pan when done and the frozen crust comes out gummy and chewy.

Cheeseburger Salad

This was a pleasant surprise. I divided the toppings into two servings instead of six, and I think having a bit of everything in each bite is what makes it a cheeseburger salad instead of sloppy joes on lettuce. I used less ketchup as other reviewers recommended.

Original Homemade Italian Beef

Easy and delicious. I use half a jar of pepperoncinis and about 3 TBS of the juice at the beginning (so it is not too spicy for the kid), and only 2 packets of dressing. We like it juicy so I also add about 1/4 cup of balsamic vinegar. It is perfect.

Easy Chicken Gyro

This is a great recipe. The sauce, if made as written, is really runny. I would take others advice and either squeeze all the liquid out of the cucumber, or not use a blender. We had to drain it overnight using coffer filters which yielded a great consistency, but is not user friendly. It tastes great though, light and fresh!

Ratatouille

Surprisingly delicious despite few ingredients. While putting this together I didn't expect it to be good at all; but when it was all done, we were shocked at how good it was. Nice clean flavor and something you feel good eating. I did sautee the onion and garlic and add it to the sauce. I still want to know where Remy finds equally sized squash and eggplant, and what he drizzles on the top of his ratatouille :)

Orzo Delicioso

This was pretty good; the guys didn't care for it as a main vegetarian course so I should have served it as a side. Use a giant skillet if you're making the whole recipe; I had to transfer it all to a pot since it ended up not fitting in my large skillet. I think the overwhelming amount the recipe makes may have turned me off a little. I did end up salting it; I don't think calling it "bland" is fair, but it's not super flavorful. Worth trying in a smaller batch if you don't have many mouths to feed.

Ranch Bean Salad

I agree it is great served over lettuce as well as the chips. I added yellow bell pepper but it would have been just as good without. Great change from taco salad and very easy to prepare and serve. Husband enjoyed it also and asked that I make it again (which makes it a 5 star recipe in my book!)

Ham Bagels With Honey Mustard Cream Cheese

Really good! I added tomatoes, onion, and lettuce and in this case, would not recommend it. I'll try these again by either broiling the bagel and meat and adding the cream cheese, or broiling the whole thing. Something about these warm just seems like ooey gooey goodness. My additions knocked it down 4 stars, but I'm giving the original 5 for it's awesome potential.

Divine Summertime Chicken Sandwich

Really good and easy to prepare. It's nice not to have to marinate chicken all day and still have a great tasting meal. Next time I'll squeeze a little lemon juice in the cream cheese for an extra boost of summer flavor.

Open-Faced Broiled Roast Beef Sandwich

Really nice change of pace! Very easy, even if you heat the sauerkraut on the stovetop. I wasn't sure if the sauerkraut was supposed to be drained or not; next time I'll drain it a little as it was a bit soupy. I added pepperoncinis and sliced tomatoes under the cheese. Great weeknight meal!

Beet Salad with Goat Cheese

Fabulous! I added chicken to make it a meal and roasted the beets (that's the only way I cook them.) I thought the dressing might overpower the dish, but the flavors blended beautifully.

B.L.A.T. Wraps

SO GOOD! I used Ranch Dressing II from this site because my husband loves it. The creamy avocado with the ranch took these from boring BLTs to delicious, well, BLATs! I baked the bacon and didn't bother to crumble them. Great recipe for an easy yet satisfying weeknight dinner!

Batman's Best Caesar Dressing

This is good, but it didn't taste like Caesar dressing to me. I would call it "Garlic Dressing" because all I could taste was garlic. I drizzled the oil in after the other ingredients and it emulsified into a mayo-like texture; I would not recommend doing it that way.
