Sam's Famous Carrot Cake

I consider myself somewhat of a carrot cake connoisseur. This is by far the best carrot cake I have ever made and tasted for that matter. And I followed the recipe, I didn't tweak anything!

Spanish Rice II

I also use chicken broth instead of water, chopped garlic and I also add oregano and cumin, as did another reviewer. I double my recipe so I used 2 tablespoons of vegetable oil and 2 tablespoons of butter. This dish is delicious .

Giant Ding Dong Cake

It's beautiful and tastes just like a giant Ding Dong. Fun to make, lots of steps, but worth the work. The kids will LOVE it!

Baked Fruit Dip

I never leave such a low rating, but I just don't get it. The swiss cheese gives it such a bitter taste. The cranberry flavor was overwhelming too. I also had to cook it an extra 15 minutes and it still was very loose. Sorry for the negative review, but this isn't for everyone.

Blueberry Cheesecake Pie

This was very good, but I agree that it was a little too sweet. I could cut the sugar in the crust and the cheese filling. Also, I used frozen blueberries and frozen raspberries. The topping was wonderful!

Cream Cheese Cookies III

Outstanding. I ended up making it in a round cake pan, so it's more like a "pie". I failed to save some of the crumbs to add to the top of the pie. I can't wait to make this again so that I can do that. The crumb crust is sensational! I will use that part of the recipe for every cheesecake I ever make again! Delicious :)

Crab Stuffed Haddock

Very tasty and easy! I didn't use celery, didn't have it and I used one long 1 lb. piece of fish and put the stuffing over it and baked, according to these instructions. Will definitely make again :)

Pumpkin and Sausage Soup

I enjoyed this very much, but was the only one out of my husband and two sons. It's for a sophisticated palate. I ended up wasting more than half of it because I couldn't eat it all myself!

Best of the Best Blueberry Muffins

Exceptional muffins. Followed recipe except that I added 1 tsp. of vanilla extract and I didn't crush any of the berries before adding to the mix. What I did do was take the last 1/4 cup of flour and toss the berries with it before adding to the batter so they berries wouldn't bleed into it. Wonderful muffins!

This was excellent! I was a little leery, as was my son, when I added the sour cream, but it was fabulous. Just made the whole thing stay moist and creamy. My whole family loved it! A Definite keeper. You must try this recipe!

Swordfish a la Siciliana

This was very good! I only had about a tsp. of pinenuts, but next time I would probably only use 1/2 a jar (1 oz.) as opposed to a whole jar, or 2 oz. I also didn't have raisins, so I chopped up some seedless red grapes. My husband LOVES this recipe. It's a keeper.

Tiramisu Cheesecake

WOW! I made this last night with the chocolate ganache topping (also from this site, the one with rum added) and served myself up a piece for breakfast! (Had to test it to make sure it was worthy of being served to my family for dessert after dinner ;o) I followed the recipe except that I doubled up on the liquor because many reviewers said it wasn't evident enough... To 6 Tbs. Kahlua, I added 2 Tbs. rum. It's strong, but I like it like that. I sorta feel like I should be eating this out of a paper back on a park bench... hee hee. I also added one cup of sour cream to the cream cheese mixture. This cheesecake is rich, heavenly and decadent!

Grilled Stuffed Swordfish

Very, very good! The swordfish was rather thick, so I had to increase the cooking time about 5 additional minutes per side. I highly recommend this delicious recipe!

Corn Chowder I
