Chewy Chocolate Chip Oatmeal Cookies

I found this recipe by googling "best chocolate chip oatmeal" and gave it a try. I have now forwarded the link so many times. People freak out when they try them and always ask for the recipe. LOVE.

Rhubarb Custard Pie I

I made this pie and my husband said, "Why have we been together 9 years and this is the first time you've made this?" and then proceeded to inhale half of it. I was raised eating rhubarb pie (no strawberries added pleeeease) so when I saw the pretty rhubarb in the store the other day I just felt like making one. Glad I did! The "custard" part makes the sugary juice sort of creamy, which is a nice addition but doesn't take away from the yummy flavor.

Meatloaf With a Twist

Everyone at our table agreed that this was absolutely delicious. A great surprise because it isn't a typical meat-loaf. It's a little bit like a meat-loaf shepherds pie, which I bet others have noted but I didn't read any other reviews!

Smashed Cauliflower Side Dish

Very easy and quick to make and so, so yummy! I tried steaming the cauliflower instead of boiling for the second try and that was fantastic too. I am adding this to my regular veggie routine.

Cheesy Creamed Spinach

Oh my goodness, this was so darn good. Super rich, though. My husband is eating it this minute and saying, "This is ridiculous, this is ridiculous". I made it almost exactly the way the recipe states except I only added 1 cup of cream and left out the extra 1/4 cup. It just seemed perfect without it. I also used another reviewer's tip to wilt the spinach in a big pot instead of a skillet. It was not going to fit in any of my skillets. The best creamed spinach we've ever had. Thank you for this recipe! I'll be making it for the in-laws for the holidays.
