Creole Cornbread Stuffing

This stuffing was fabulous and I didn't find it to be all that much work, like others have said. Though I did break it up over three days, which helped. Night one, I made the cornbread, chopped the veges and premixed what I could. Day two, I made the stuffing, and morning three, I popped it in the oven for an hour on 350. The only changes I made were cutting the cayenne to 1 tsp., using a 1/2 can of mild green chilies over fresh and omitting the hot sauce. Personally, it was still a tad spicy for my tastes (I'm a spice wiener) and I'll probably cut back even more the next time, but others raved about it, especially my hubby who loves spicy food. It's definitely a keeper and I can't wait to try it again!

Carrot Cupcakes with White Chocolate Cream Cheese Icing

These were awesome! I'm not a huge fan of carrot cake, but was really craving some and these were perfect. I'm a chocoholic and made these along with a batch of dark chocolate cupcakes for a party. I preferred these hands down! A VERY RARE occurance! They were a huge hit with everyone. Highly, highly recommend!

Dark Chocolate Cupcakes with Peanut Butter Frosting | Brown Eyed Baker

I thought the icing could have been sweeter and I didn't love the combo of the peanut butter icing with this particular cake. The cake was good, but very dense. Not what I was expecting. It was good, but I don't know that I would make it again.

Crescent Layer Bars

I didn't have all the ingredients on hand, so I ended up using walnuts, milk chocolate, butterscotch, and white chocolate chips. They just looked bad from the minute I took them out of the oven. They ended up being really sticky and gooey. The condensed milk was just in big, runny globs, which was pretty disgusting. I realize now that I misread the directions and didn't let them cool for an hour before sticking them in the fridge. Perhaps thats why they ended up that way? I don't know, but I don't plan to ever try this again. I rated them 2 stars, not because of my errors, but mainly because I hated the crescent roll bottom. Don't get me wrong, I LOVE crescents, just not as a crust in a cookie dessert. I'll stick to rolling crescents up with meat and cheese!
