Canadian Maple Rice Pudding

Loved this recipe. I make it for breakfast as an alternative to oatmeal on cold mornings. I add dried apricots as well.

Hot Dogs 'n' Rice

My mom handed down this family favorite also. I cook in a different order though. I saute onions, garlic, and green pepper until soft. Add a full package of hot dogs and saute until brown. Then I add the stewed tomatoes and ketchup and cook for 20 minutes. I add pre-cooked rice (1.5 cups) last. Also, I scatter shredded cheddar on top, put the cover on melt, and serve right out of the pot.

Hot Dog Soup

Great starter recipe! I made the following changes: I used my standard soup base/starter (onion and celery sauteed on EVOO with a pinch each of rosemary, thyme, marjoram and a bay leaf, add two chicken bouillon cubes, crushed, one 14.5 oz can of diced tomatoes and two cups boiling water) then added three cups Schwan's mini bow tie pasta and vegetable blend and 1/2 package turkey hot dogs, sliced. My kids absolutely love it and I love that I can satisfy their never ending demand for hot dogs with something balanced and healthy. Thanks! :-)

Loaded Baked Potato Casserole

Loved this! As it turned out I did not have any hash browns or french fried onions. I put mini frozen turkey meatballs, tater tots, frozen green peas, and frozen green beans as the bottom layer in the casserole. Then I crumbled the bacon and scattered the cheese for the next layer. For the top layer I sauteed: 1 small onion, 2 celery ribs, 4 garlic cloves and one 4 oz can mushroom pieces in olive oil until tender. Add one can cream of mushroom soup, one can cream of celery soup and 1 cup milk. Pour soup mixture over top and bake until bubbly in center, about 50 to 60 minutes. Everyone in the household loved this one dish meal!

Creamy Banana Walnut Oatmeal

I modified this recipe for stove top and to serve 4 as follows: 1.5 cups whole rolled oats; 2 ripe bananas pureed with honey in a blender; 1.5 cups soy milk; dash of cinnamon & nutmeg. I cooked the oats in the boiling soy milk for about 5 minutes then I stirred in the pureed bananas and added the cinnamon and nutmeg and cooked for two minutes more. Then I ladled into four bowls and topped with whole pecans and a sprinkling of brown sugar. Very tasty and definitely a keeper!

Shrimp and Sugar Snap Peas

Quick and easy. I omitted the chili oil and my kids, husband, and MIL loved it. Used the leftovers in a frittata (with some extra garlic, herbs, and cheese and that went over very well, also.

Double-Crust Rhubarb Pie

Spiced Pear Bread

Excellent recipe, easy to make. I used a blender to combine the first five ingredients. Also, I only had two cups of pears and sweetened applesauce on hand so I switched the amounts for the applesauce and sugar (1 cup applesauce, 1/4 cup sugar). I used brown sugar and added a tsp of vanilla. Yum!! Definite Bake Again!

Chocolate Gravy II

Awesome!! My 3 year old asked for chocolate for breakfast one day and I found this recipe and loved it! My husband loves it, my baby loves it! I use it as a reward for potty training, something special for the boys if daddy is out of town, it is so easy!

Cajun Style Red Bean and Rice Soup

Works perfect in the slow cooker: I left out the bacon and ham hock and used turkey keilbasa. I sauteed the onion, green pepper, and garlic and added it to the rest of the ingredients in the slow cooker. Cooked on high for one hour then on low for eight hours. It was phenomenal! Everyone loved it, even my very Southern MIL :-)

Crispy Mashed Potato Pancake

Excellent, my whole family liked it. I followed the suggestions of previous reviewers and used the 1 c./1 egg ratio. I added 1/4 cup minced onion and 1 tsp Tastefully Simple's Garlic Garlic. Also I used a blender to combine everything. I served them with cinnamon applesauce and they were a big hit. NOTE: I have a small griddle and so could only fry four at a time, so the actual cook time was a little longer for me for the whole batch.

Bread Pudding I

I had to double the bake time to get the pudding to set and double the amount of corn starch to get the lemon sauce to thicken. I ended up cooking an alternate breakfast for my hungry toddler (and myself) while waiting for this one to finish.
