I'm a Nutrition & Health Counselor and I'm always looking for easy healthy recipes. I teach a cooking class for beginners. They may not leave wanting to cook but at least they can make healthier choices at the supermarket and restaurants!
My favorite things to cook
new to baking, well new to baking and having it come out correctly....Banana nut bread, corn bread, sugar cookies, chocolate cookies and chocolate chip cookies. My husband likes sweets!

My cooking tragedies
Where should I start? Apple muffins without apples! I always seem to forget a important ingredient! Like baking soda. Thinking you can replace baking soda with baking powered. Thinking it's ok to leave out ingredients or add in ingredients....trail and error!

Pecan Pumpkin Pie I
Super easy! Even for the beginner like me. I doubled the spices like suggested and omitted the orange zest to please all. TIP: I used two shallow pie tins ( 8 inch) and this filling makes enough for two pies. I doubled the topping and covered each pie with the pecan mixture giving it a nice thick top crust so to speak. This way no extra filling like others mentioned in their reviews. I also used home made pie crust so I was able to make the lip of the pie high for holding the extra pecan topping. YUM!
