Coffee Ice Cream Fudge Cake

Baked Ziti IV

This is a great recipe, but I used 2 full jars of Classico sauce (one portobello and one sun-dried tomato)which I ran through the blender to hide the chunks from a picky eater. I also used l/2 lb. ground beef and l/2 lb. Italian sausage, removed from the skin. It was not too much sauce and my guests quickly accepted the offer to let them take the left-overs.

Cheesy Potato Casserole

One of my son's favorite dishes...but only when I brown the potatoes and onions first, add pepper, and use l/2 mayo and l/2 sour cream. The browning gives it more flavor and also cuts down on baking time. Use real (soft) bacon bits.

Spinach and Strawberry Salad

Awesome Chicken Noodle Soup

I made a pot of this for a sick friend and made the "mistake" of giving a bowl of it to my husband before taking it to her. He liked it so much, I had to do it all over again the next day. Teenagers loved it, too...they even ate the veggies! Used Muellers fine egg noodles and the soup base that comes in paste form.

Chocolate Chip Cookie Ice Cream Cake

Impressive presentation for my son's l6th birthday! I used a deep dish pie pan and would suggest spraying it with Pam. Pouring hot margarine over crushed Famous Amos chocolate chip cookies made a wonderful chocolate crust, but it took more than 20 small cookies to soak up the margarine. I softened both the caramel and hot fudge for a minute in the microwave and used coffee and cookie dough ice creams with the caramel between; freezing between layers. For the top layer, I used a melon ball scoop and covered the whole pie with little cookie dough balls, then a pastry tube filled with Cool Whip piped over the entire top. Used softened hot fudge to write "Happy Birthday" over the Cool Whip, then lined up maraschino cherries with stems around the edge. It was an awesome "birthday cake".
