Chicken Taquitos

I put the corn tortillas in hot oil (I use coconut oil) long enough to get soft enough to roll without falling to pieces, so about 2-3 seconds per side. Set aside until they are cool enough to handle, then fill, roll, and put them seam side down to fry. Didn't fall apart at all, and they were cooked closed. I didn't have any salsa, so I just did cheese and some garlic powder and onion powder and they were gone pretty quickly. I will try them with salsa next. Thank you for a great recipe!

Quick and Easy Alfredo Sauce

Quick and easy. I loved that it used milk (we use 2 percent), and not cream. I didn't have enough parmesan the first time, but it still was fine with half the amount. The second time I made it, I had the right amount and it was even better. I used half a container of the powdery kind, but I think I'm going to try fresh parmesan next time. For a super fast recipe, I think it was very good. Thank you for sharing it!

Bar-B-Que Sauce

This was exactly what I was looking for. Used what I had on hand. I followed another reviewer's tip and used regular vinegar and prepared mustard since I don't like cider vinegar and I didn't have mustard powder. I also omitted the hot pepper sauce because my daughter doesn't like things too spicy. I think the recipe would be great either way, though!

Sweetened Whipped Cream

I also did this without chilling anything, and it came out great! I doubled it, and I hand whipped it with a plastic whisk because I don't own a mixer or beaters or anything like that, and it really didn't take much time at all. I didn't underwhip, because I used it right away. Great recipe!

MMMMM... Brownies

I was also looking for a brownie recipe that didn't use cocoa powder (I never have any), and this was simply amazing. Better than a box mix by far, and just perfectly fudgy. Also, best name ever for brownies! I used semi-sweet with some milk chocolate chips because I doubled the recipe and didn't have enough semi-sweet.

Fluffy Pancakes

I doubled the recipe and switched out butter for shortening and added another 1/4 cup of milk like Mary Domaz suggested. They were easy to make, cooked fast, evenly, and everyone liked them. They are very fluffy and taste great! I fed 4, but had some leftovers. It really depends on how big you make them and how much each person eats. This is my new go-to pancake recipe!

Cafeteria Carrot Souffle

I really liked this. I used a food processor and made the carrots very creamy because mashing wasn't working for me. I used 3/4 Cup of sugar like some suggested. I don't know if another 1/4 Cup would have made that much difference, though. I added a bit of cinnamon and nutmeg, as well.

Portobello Penne Pasta Casserole

Hearty Vegetable Lasagna

This is better than meat lasagna! My kids even love it! I mince the mushrooms and add shredded carrot to the sauce, then use the idea someone posted of putting spinach in the ricotta. It's fantastic! I am making it again tonight!

Bordelaise Sauce with Mushrooms

This sauce was amazing! I doubled it, but had some leftover, so I added a bit of cream and more red wine to it the next day and had it over tenderloin and dipped artisan bread into it. Both ways were so good. I did not have shallots, thyme, or red wine on hand, so I used sweet onion (diced), oregano (suggested as a replacement for thyme) and the white wine I had on hand. To be so good, even with replacements, really speaks well of the recipe. This is a keeper!

Spanakopita

I only had 1 box of spinach, so I halved the recipe. I used mozzarella since I didn't have any Swiss, and pie crust since I didn't have phyllo, but kept everything else the same. This was so good! I imagine it's even better with the phyllo! Definitely making this recipe more often. Thank you!

Blue Cheese, Spinach Meat Loaf Muffins

Great recipe! I used frozen spinach, drained, and the whole container of blue cheese since I needed to get rid of it, but they still came out really well! I used my regular topping, but added a splash of worcestershire to it to complement it. I will definitely make this again! So quick and easy!

Roast Beef and Yorkshire Pudding

I lived in England for 3 years, and my children were born there. Roast beef and Yorkshire pudding was my favorite meal there, and this recipe tastes the same! I would suggest you take the puds out of the pan when they are done so they don't get flat and chewy. Learned that the hard way! They were still good, though! I added potatoes and carrots to the roasting pan, and they were a great addition! Perfect Sunday meal, and leftover roast for sandwiches if you make a larger one.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

I halved the chili pepper, since I didn't want it too spicy, and that was perfect for me. I also went with powdered ginger, and only 1/4 tsp since it was not fresh ginger root. The mix of seasonings is perfect. The reviews were incredibly helpful. I didn't puree it (didn't want more to clean), but I think it would be really good pureed. It is a great one-pot dish, with incredible flavor. I was pleasantly surprised at how good it is! Also, I used butter because I ran out of my usual coconut oil.

Beef Stroganoff III

I actually used ground beef, regular yellow onion, and fresh mushrooms since that is what I had on hand, but this was still very good. It will be so much better with roast, but it's great with ground beef if that's what you have!
