Lemon Pepper Pasta

This was pretty bland. After following the recipe exactly (except using only 10 oz. pasta) I tasted it, and it tasted like.... pasta. So I added lemon pepper, and parmesan on top. It was better this way. We had this with Greek-Style Rib Eye Steaks, from this site, and it was a good thing to serve with that, since the steaks provided lots of flavor.

Bob's Blue Cheese Dressing

This is a good dressing, and was so easy to make. It is extremely thick, so I added some milk to thin it down. I increased the blue cheese too.

Mammaw's Waffles

These are really great waffles. They are so light and fluffy, and crisp on the outside. I used half whole wheat pastry flour and you couldn't even tell any whole wheat was in there. My kids just loved these and kept asking for more- even my one-year old (who just ate his plain). I chose this recipe because it used buttermilk and didn't involve whipping the egg whites separately. I also liked the fact that it used yeast. I have some batter leftover so I'll have to see how that is tomorrow.

Almond-Topped Fish

This was so good- we really enjoyed it. I only had low-fat mayo so I used that. I added some old bay. I also used tilapia because it's one of the only available fishies in my po-dunk area. This had such great flavor and was simple to make. I loved the onions- they were cooked to a perfect tenderness too. I toasted the almonds in the oven for 2 minutes while the butter was melting. We had this with Garlic Parmesan Orzo from this site, and broccoli. I mixed some of the onions up with my orzo. It was all so good! My 5 year old loved it too.

Classic Whole Wheat Bread

This bread is pretty good. One thing- this doesn't make enough for 2 loaves, so I doulbed the recipe to get 2 loaves. I ran out of whole wheat flour (only had 1 cup) so I used white whole wheat for the rest. This rose very well, but when I put them into the hot oven to bake, the loaves deflated. I'm sure it's not the recipe though- it's probably me. I had the loaves in the oven (with the light on) to rise, and I removed them to pre-heat the oven. Then I had to put them back in- maybe it was all the movement (although I tried to be really careful). So although my loaves are pretty short, they are still very tasty and soft inside. This recipe was easy to make, too.

Avocado Ham Sandwiches

This is a wonderful sandwich- I really enjoyed it. I used my own homemade bread (Classic Whole Wheat Bread from this site) and cheddar cheese (and light mayo and light cream cheese). I loved the avocado mix- I added a sprinkle of garlic powder. This made a nice light meal with a fruit smoothie.

Lemon Blueberry Drop Scones

I am loving these!! They are so good! I only had vanilla yogurt, so I added a teaspoon of pure lemon extract to the wet ingredients. I used half whole wheat pastry flour with wonderful results. I love them glaze too- it's the perfect finishing touch. I like that this is a drop recipe because I don't like trying to roll and cut gooey scone dough. These are moist, light and fluffy with a wonderful blueberry/lemon flavor. Great recipe!

Hot Fudge Sauce

Great recipe! I was all set to make some hot fudge using evaporated milk, but realized I was out. I did have sweetened condensed milk on hand, however, so I looked up a recipe using that and found this recipe! I used fat free condensed milk, and omitted the salt, because I used salted butter. This was soo easy to make and sooo good, I think I almost made myself sick eating so much of this last night with vanilla bean ice cream! Yum! In fact I think I have to go get a spoonful from the fridge right now. This one's a keeper!

Brown Sugar Brownies

These are good. I overbaked mine, because when I went to take them out (the edges were browning), the middle seemed jiggly and wet still, so I left it in. I waited until the middle wasn't jiggly anymore, and I guess I waited too long, because they are a little too dry. Still good though. I would make again, and try to underbake them and let them set up before eating. Great flavor! We had these as brownie sundaes with Caramel Butter Pecan Ice cream, whipped cream, and caramel sauce.

Simple Maple Syrup

Very easy to make, and good flavor. I did use 1/2 cup of brown sugar in place of 1/2 cup of the white. I also used 1 tsp. maple flavoring. This is the way my parents always make "maple syrup". I prefer the real stuff but I'm out of it. This was a good sub, thanks!

Caramel Pudding

This was pretty good. It took a little time to make, but I followed the instructions (using my kitchenaid, which made it easy) and it came together very well. I cut the recipe down to 10 servings. The flavor was good enough, but I didn't like the texture much. It was almost... pasty and gluey. Maybe that's from using flour instead of cornstarch. So I wouldn't make it again, but that doesn't stop me from eating it!

Hungarian Goulash I

This was good and really easy. I put it in my crockpot and let it cook all day. I only added 1/2 extra cup of water because I added a 1 lb. bag of baby carrots to the crockpot. I was tempted to add another can of tomato paste, but I fought that urge, and I'm glad I did. (Ha ha). As everything got a chance to cook together, the sauce thickened and it was just the right amount of tomato. Served with spaetzle noodles.

Pasta Lasagna

This was really good and quite easy and fast to make. I used a mix of whole wheat penne and rotini, Classico pasta sauce and an 8 oz. bag of Pizza Cheese (included cheddar and mozz.) Not as good as lasagna, or course, but still tasty! Served this with sauteed lemon butter broccolini and snow peas.

Best Black Beans

This is a tasty, simple bean recipe. I used white beans and simmered for probably 20 minutes, or more. I loved the creamy texture. I want to try with black beans next. We had this with Dominican chicken, brown rice, sliced avocado and fried plantains.

Praline French Toast

This was very good. Very easy to make, too. I cut the recipe in half and used 4 eggs. I also used 2% milk, which worked just fine. Due to reviewer's comments about the oven temp, I baked mine at 375. Inverted it when it came out of the oven, and it had that perfect, browned french-toast look. We liked the syrup too. It was very sweet, but it's supposed to be that way.

Cracked Sugar Cookies I

These sugar cookies are great! I love them. I made these with my children this afternoon. They loved making and eating them. I used half whole wheat pastry flour, and added 1/2 teaspoon almond extract in addition to the vanilla. I found this recipe when I was looking for ways to use up some egg yolks in the fridge. Glad I found it!

Coconut Macaroons German Style

These are so good. I made them to use up 4 egg whites I had sitting in the fridge. Something went wrong, and they never really worked as a meringue, so I threw them out and started over with fresh ones. This recipe came together perfectly the second time. It was beautiful. I used unsweetened coconut, which was a wise choice. It would have been way too swee otherwise. I love the flavors of cinnamon and almond in here. The outside texture is a crisp meringue shell almost, and the inside is a chewy coconut macaroon. I love it!

Baked Apple Oatmeal

Wow, I really thought I was going to love this. I didn't really care for it though. I love oatmeal in most any form so I don't know what happened. The texture was kind of wierd. The flavor was good, and it is very filling, and healthy. It makes a ton too- I should have cut it in half. I'd say it makes more than 6 servings. I might try the leftovers tomorrow and see how they are.

Graham Cracker Crust II

I made this in my food processor. I used Trader Joe's cinnamon grahams, and I wasn't sure on how many to use, because they are a much different texture than regular grahams. Anyway, I used way too many, I guess, because I had enough for one 9-inch pie crust and 4 mini pie crusts! Tasted great, and really firmed up in the oven. I was afraid it would be crumbly, but it wasn't. I needed a graham pie crust without trans fats, and this was a great recipe! (TJ's doesn't use trans fats in their graham crackers, and they're really yummy too.) I like how this recipe doesn't have extra sugar.
