Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup)

This was an interesting one. I love broccoli cheese soups, and I love curry, but I guess I just don't love them together. I thought it was a wierd combo. It also didn't get very creamy, although I let it cook awhile, hoping it would thicken. Then I pureed some of, but it just gave it a wierd flourescent green color.

Easy Pavlova

This was so much fun to make!! I really enjoyed it. It was so easy, too. I followed the meringue recipe exactly but didn't have any whipping cream on hand and couldn't get to the store. The internet came to the rescue! I found you could whip evaporated milk (look online for instructions.. you have to freeze it for 30 min. first) and it looked just like whipped cream! It didn't have the exact same taste, but it was pretty good. So I topped this with my whipped evaporated milk and fresh strawberries. It was really good! I love how the pavlova had that crunchy crust and soft middle. I'll make this again! Next time, I'll put whipped cream on individual servings though instead of topping the whole thing at once.

Lime-Thyme Potato Wedges

I think way too much butter is called for, but otherwise, great potatoes! I love lime in anything and I would have liked even more in these.

Patsy's Best Barbeque Beef

I really liked this. It was so good and tender. We cooked it overnight- about 13 hours. I liked the celery in it. Added a touch of dijon mustard and part of a diced orange pepper.

Cheddar Mashed Potatoes

These were really good. We did have to add about one TBS of milk. I loved the flavor from the bacon and cheese. Nice alternative to regular mashed potatoes, especially when you don't have any gravy to top them with.

Penne a la Vodka I

We really liked this. I like how it uses both fresh and canned tomatoes. I didn't have stewed tomatoes, so I used one 14 oz. can of petite diced and one 14 oz. can of tomato sauce. The bacon added a great flavor. I cut down on the cream and omitted the vodka, since I didn't have any. Served with a baguette and steamed asparagus.

Beef and Bean Chimichangas

We really liked these. They are so easy to make, and they're tasty and filling. I used super lean ground beef and Trader Joe's whole wheat tortillas. I also used pepper jack cheese. The leftovers are great warmed up the next day in the oven, wrapped in foil.

Strawberries with Balsamic Vinegar

This is really yummy. I cut the recipe down to just make a serving for myself. I used homemade vanilla sugar and this was delicious. It would be good over pancakes or ice cream.

Marshmallow Crispie Bars

I made these on the stovetop. I love how they include vanilla. I don't think I've made Rice Krispie treats since high school! My kids LOVED making these. I let them stir, and then press them in the pan. Then we sprinkled them with sprinkles. Most of them are gone already!

Greek Orzo Salad

This was so good. I made my own changes, mostly to the dressing. I added lemon juice, fresh basil, and red wine vinegar. Fresh garlic would be nie too. I enjoyed this at room temperature.

Toffee Apple French Toast

We loved this. The flavors of everything together are so good, and I love the texture too. I cut this recipe in half for my smaller family. I did change it a little. I omitted the white sugar and cut back on the brown. I cut the cream cheese into chunks and layered bread cubes, cream cheese, apples, toffee bits, bread cubes, milk/egg/brown sugar/vanilla mix. We drizzled a little maple syrup over servings before eating. Served with maple bacon and fresh strawberries for a delicious Sunday brunch!

Roasted Lemon Chicken

The whole family loved this! I loved the lemon flavor with the herbs and spices. My daughter helped with the spices and was a little heavy-handed with the onion powder, but it was delicous anyway. We didn't discard the skin (that's the best part!) and it was so delicious! The meat was super tender and juicy. I roasted at 350 for about an hour and a half. The juices in the bottom of the pan were great for drizzling over brown rice!

Burnt Butter Frosting

I was glad to find this recipe, as I had accidently burnt some butter and didn't know what to do with it. I made Blonde Brownies from this site and frosted them with this. I love the flavor of the burnt butter frosting- I've never had it before!

Blonde Brownies I

These are great! I used half whole wheat pastry flour and omitted the cholate chips. Instead, I frosted them with Burnt Butter Frosting (halved) from this site. (I had accidentaly burnt some butter while making Light Wheat Rolls... this was a good use for it!) Both the blondies and the frosting have a wonderful carmely flavor, and the blondies have a great texture.

Honey Key Lime Grilled Chicken

This was really good. I used 2 chicken breasts and the whole amount of marinade. I love grilled lime chicken, and the sweetness of honey makes this one really tasty. It was super tender too.

Delicious Ham and Potato Soup

This is a flavorful, delicious and easy potato soup. I added extra ham, because I wanted to use it all, and used a 4-cup carton of low-sodium chicken broth and skipped the boullion. I used chopped baby red potatoes and added a handful of sharp cheddar at the end. I also added dried chives. This was really good with a loaf of rustic bread.
