Baked Ziti II

This is a good meal to feed to kids and picky eaters, but if I made it again it would need some serious spicing up (garlic, onions, etc). However, my kids loved it, and it was an extremely easy, and filling meal.

Angel Hair with Feta and Sun-Dried Tomatoes

We loved this- even the kids. I did leave out the cilantro, it just doesn't seem to "go". If I had fresh basil, I would've used that instead.

Lemon Meltaways

I loved these. I upped the servings to 40 to use 1 cup of butter. They were easy and fun to make, and they really do melt in your mouth.

Lemon Cream Cupcakes

These were sooo good! The cupcakes were tender and perfect and the frosting was refreshing and lemony. I divided the cupcake recipe in half to make 15, but upped the frosting servings to 45 in order to frost all 15. I had the perfect amount to ice all of them using my 1M Wilton Tip. I'll definitely make these again- they may be the best cupcakes I've ever had!

Key Lime Pie VII

My whole fam LOVED this pie! I used 2 whole cans of sweetened condensed milk, and now I realize that was a little too much, but it worked. This came together so fast, and was so creamy and yummy, and cut beautifully. I think most pies like this need a meringue but this one didn't. I used one can of regular sweetened cond. milk; one can of fat-free and it still worked wonderfully. I also used a shortbread crust.

Ham, Basil, and Feta Scrambled Eggs

These are delicious scrambled eggs. I made the recipe as directed, but cut it in half for only one serving. I added a few chopped chives and omitted any salt. The ham and feta are salty enough. I also added the feta torward the end of the cooking, so it wouldn't get lost. Wonderful!

Beef Paprika

I admit I made major changes to this recipe. First, the shortening had to go. I used about 2 TBS. olive oil, which was plenty. I nixed the ketchup too, and just used tomato paste with a little water. I only simmered a little over an hour, and it was perfectly tender. Served over spaetzle noodles, with peas on the side. Everyone enjoyed this.

Best Ever Banana Bread

This was pretty good. I doubled the recipe to use 4 bananas, and made 8 mini-loaves and one big loaf. The flavor was good, and it was easy to mix up. I used half applesauce for the oil, and olive oil because that's all I had. It made the apartment smell great too. Thanks.

Chewy Chocolate Chip Oatmeal Cookies

These are pretty good. I followed the recipe exactly, and had no problems with spreading or thin cookies. IN fact, they stayed so fat and round, I had to flatten the rest of the batch with a glass before baking. Good way to use up some ingredients.

Oatmeal Toffee Cookies

I really like these. They have a yummy, chewy texture and the great flavor of toffee. I used an 8 oz. bag of toffee bits. I also baked at 350 for 8.5 minutes, and they were perfect. Used 1/2 cup of whole wheat pastry flour.

Grilled Fish Steaks

Goat Cheese and Arugula over Penne

This was really good. I wanted the arugula to wilt down a lot, so I drained the boiling pasta water over it, in a colander. It worked very well. I don't love the strong flavor of arugula, so I liked this recipe, with other flavors. I did use feta because I don't like goat cheese. I also used whole wheat penne.

Jay's Signature Pizza Crust

I really enjoyed this. I used 1 cup of whole wheat flour and made the dough in the Kitchenaid. I made 2 pizzas out of it. The dough puffed up nicely around the edges and the bottom of the crust was just crisp enough.
