Ingrid's Caesar Salad Dressing

Cranberry Sauce

I used about 3 cups of cranberries, 3/4 cup sugar, 1 cup oj, and 1/2 cup gran marnier. I am not a fan of too sweet and I think next time I will use 1/4 cup sugar, 1/4 cup agave.

Best Ever Crab Cakes

Asiago Sun-Dried Tomato Pasta

Oh-So-Good! I followed other suggestions and used 2% milk entirely. I added tons of fresh grated asiago. I buy my sun-dried tomatoes dry, so I mwaved a bunch for about 30 seconds, covered, in evoo. I skipped butter, instead rendering in bacon fat. I only use thick cut butcher bacon. I skipped the chicken. I also used with 100% wheat penne (no durum or semolina wheat)

Parmesan Sage Pork Chops

Perfect. I used leftover bread from Panera (why do they give bagets with sandwiches?) and grated it for bread crumbs. I also tripled the sage (I use albanian rubbed sage and it is divine). I used a nice rind of asiago instead of parmesan. Still was wonderful.

Pineapple Salsa

Chuck's Molasses French Toast

This was tasty for me (I love dark molasses). The bf added European butter and Maple Syrup. He is not a fan of molasses. I did not use Challah bread (I do not keep that "in stock" and this was a whim). I used plain old white bread. I am lacto-intolerant and he drank all of his 2% milk other day so I subbed Silk Soy Milk. Next time I think I would use 2 tbls and 2 tsp of molasses. Will try this again but have to find a way to make the bf also happy.

Chicken & Shrimp Jambalaya

Fantastic. Added the shrimp last possible second. We ate all the shrimp that night. (shrimp does not reheat well) By the third day the stew finally soaked up all the liquid. Very good.

Vegan Mexican Stew

I uploaded a picture. The bf is kind of skeptical of foods that do not involve meat, but he was convinced this was possibly the best he ever had. I kept all quantities, just changed the way they were fullfilled: 2.5 cups of chicken broth (had open from earlier in week) 2 cups of water/ 2 chicken bullion cubes nearly 1 tbls chili powder nearly 1 tbls cumin 14 oz hominy (was not sure if he liked it- so didnt want to stress the hominy) 14 oz frozen corn (to balance with hominy) 14 oz tomatoes with green chili (bf cannot do too much heat) 28 oz canned diced tomatoes (plain?) only used 2 pots! boiled potatoes, carrots, celery in sea salted water. drained. same pot boiled broth/bouillon. At same time started the onion et al in enameled cast iron. combined all in that pot and simmered. DIVINE

Slow Cooker Chicken Mole

At the time I made this (a) there were very limited places to go for these peppers (b) it was my first slow-cooker meal Now I know where to go and I am going to redo the recipe correctly! It was good but I think if I followed the recipe, it would be perfect!

Mango Salsa

This was so delicious! I did add just a bit of hot pepper flakes (to my portion only) and it was so good. No matter what it went well with everything! Some items I served this with were rice, with chicken tacos, with sea bass. with just some tortilla.

Summer Grilled Cabbage

I did this on my george foreman (being an apartment with no outside access dweller). I then added it to my kelbasa, onions, and egg pasta. Stuck all in crockpot and I think the grilled versus sauted cabbage made a nice difference than usual.

Rosemary Chicken with Orange-Maple Glaze

good (3/5). I did not cover the skillet to saute (I tend to keep the lid off at that point). I did cook the sauce up, but I agree with others, not sure if it was needed. I wish it was more of a glaze, I think next time I will not think of that as an afterthought but keep it in mind by reserving some of the liquid. I prefer to cook with vermouth instead of white wine so maybe that was the good and not great feeling?
