Easiest Teriyaki Marinade Ever

Excellent! I did have enough time to marinade for 2 hours and it was still great. I grilled it on the forman, so fast and easy! I would recommend making broccoli and rice or couscous with it to make it a meal!

Twice Baked Potatoes

A great alternative to the usual baked potato. It takes a little more time, but is so good! I used reduced fat sour cream, 2% cheddar cheese and less butter and it was still delicious! I would recomend mashing the potatoes when all of the ingrediants get into the bowl to make a more creamier mixture. I will definately make this again! Thanks!

Cream of Chicken with Wild Rice Soup

It was good, but not thick enough. I like my soup thick. The flavor was pretty good, but was missing something. I will probaby try this again because it has potential!

Cabbage Roll Casserole

I used ground Turkey instead of ground beef for a healthier version. I added garlic and sauted it with the meat and onion. I also added paprika and oregano. It was really good and tasted even better the next day. This is a good, healthy way to incorporate cabbage in your diet, which is really good for you!

Chicken Marsala

Absolutely delicious! I omitted the butter for less fat (44 less grams of fat) and I just used olive oil, which is much healthier. I only used two chicken breasts and I added more wine and sherry to make more sauce...and of course I added more mushrooms. The mushrooms really cook down, so use many! Fast, easy, delicious and healthy!

Mouth-Watering Stuffed Mushrooms

I used 1/3 less fat cream cheese and I put breadcrumbs on the top to brown a little more. I wasn't that impressed with these but the boys at the Superbowl party loved them...so what do I know =) I will probably make these again because they are something different and fun to make!

Sea Bass Cuban Style

There was a tanginess to this that I couldn't place what ingredient it came from. It was good and really had a different flavor to it. Something you make only once in a while. Not my favorite, but something different.

Chili-Lime Chicken Kabobs

I used the lime juice from one lime and I think that was plenty. I think the lime is just for a hint, not a full flavor. It was delicious and healthy! I marinated the chicken for 6 hours and put it on the Forman grill. There was still some marinade left over, so I poured it in the pan with the mushrooms that I was cooking. This is a keeper!

Best Marinara Sauce Yet

The name says it all! Really! It is the best marinara sauce and it's so easy to make. My mom cooks hers all day and it doesn't compare (sorry mom!) I think the white wine is what makes this recipe and i add alittle bit more than it calls for. Delicious and healthy!

A great light recipe to make during the summer with yummy ripe tomatoes! If you like bruschetta, you'll love this. I used less olive oil to cut down on the fat. Yum!
