Stuffed Kielbasa

I have made this A LOT and have given this recipe to many co workers with great reviews as well. You dont want to use an expensive Kielbasa for this just a Hillshire or the like. Boiling not only removes some fat but you can lay it out and cut your sizes without having the "curly" end. My daughter doesnt like sauerkraut so I omit it on hers and we also prefer cheddar cheese over Mozzarella by far

Cheeseburger Meatloaf

The way I jelly-roll this is I take a baking sheet and line with wax paper a little longer than the pan and spread the meat mixture out the full length of the pan, its about 3/4 of the way up the sides, spread shredded cheddar cheese all the way around keeping an inch or two from the sides and end then pulling up on the wax paper I start to roll, roll a little pull the wax paper, keep it fairly tight, roll a little and pull the paper till the end. I spray a little cooking spray onto the pan turn the roll sideways and voila - fold the ends down and form a good "seel" at the ends and bake. Be sure to let set for 10min or so so the cheese doesnt ooze all over. Enjoy - I like to top it with Ketchup the last 15min of cooking as well.

Baja Fish Tacos

Outstanding recipe and has become a staple in our household. They light and refreshing and I love the dressing as well - We use soft tacos or small tortilla's when having these - great with Cod and Talapia !!

Scalloped Potatoes and Onions

Wonderful I made this to take for an Easter dinner -- NO leftovers and I had doubled the recipe! When stirring in the flour into the butter watch the color you can make your sauce a brownish color, not that it tastes bad, I did it, and I had nothing to take home. Excellent recipe and I will be making this again. Thanks!

Mouth-Watering Stuffed Mushrooms

Very good and tasty went quickly. I had to stop myself from eating them all before anyone else tried them.LOL But just a word of caution, I tripled the recipe for larger amounts (the recipe does make more + stuffing) I tripled the cayenne also, I like it hotttt anyway but for those of you who have people who do not like spicy foods keep it 1 or 2x. I'll use it again for Christmas. Thanks
