Pink Lemonade Pie

After filling the first pie shell, I found the filling way too shallow (only about half full) so I put it all into one and it was the perfect amount. I made it the night before and let it sit in the fridge. By dinnertime the next day it had set very nicely. A little too sweet for my boyfriend but I enjoyed it.

Cheese Cake Cups

Soooooo good. I found these individual cheese cakes much more practical then a whole cake. Not as messy and you can just grab one and go. Can be eaten plain or topped with cherry or blueberry pie filling, jam, nuts, fresh fruit, chocolate chips, whipped cream... Fun for kids to decorate too.

Beef Tenderloin With Roasted Shallots

I cheaped out on this recipe with a less expensive cut of meat to test it out before spending the money on the more expensive tenderloin but even still this sauce made it absolutely delicious. My boyfriend doesn't like shallots so I gave him the sauce without them and he loved it too.

Pecan Crackers

I didn't like these. Maybe I just didn't cover the graham crackers well enough with the sauce, but they tasted way too toasted and crunchy (and I only kept them in the oven for 10 minutes instead of 12). Might have been better if completely soaked in sauce without any bare cracker exposed. I don't think I'll make them again though.

Golden Rum Cake

This is the best cake I've ever had. I first tried it about 15 years ago and then when I stumbled upon this recipe, I got my boyfriend to make it for me for my birthday and now he's hooked on it as well. He's made it many times over the past few months when we've had company over and impressed both his family and mine. There hasn't been anyone yet that hasn't liked it.

Barbequed Marinated Flank Steak

This was very good. However I think that I would marinate for longer next time (2 nights) because we didn't find it had enough flavor. I marinated overnight and used a George Foreman grill. I also found it to taste a little greasy. I may try cutting back on the oil a little bit next time.

No Bake Peanut Butter Pie

After reading all the great reviews, I had to try this but was very disappointed. The first couple of pieces we tried frozen and then put the rest in the fridge. I liked the texture of the peanut butter filling better when it was frozen however the crust was too hard. When I thawed it in the fridge the filling turned way too soft and too peanut butter tasting. My boyfriend likes peanut butter but he wouldn't even finish this. He said all he could taste is the peanut butter and it wasn't as good as eating peanut butter itself. I had to throw half of it away because neither one of us wanted the rest of it. It might have been better mixed with chocolate chips. It would add a little bit more texture and flavor.

Potato Pancakes I

My boyfriend and I both enjoyed these. I will definitely make them again. We didn't use the onion since he doesn't like them. But to keep the pancakes from tasting bland, we used some dry minced onion and put a lot of salt and pepper and fajita seasoning along with parsley to add a little color. I had to add an extra couple of tablespoons of flour to thicken it up a little.

Easy Tuna Casserole

Delicious. I made a few changes though. I measured 1 and a 1/2 cups of dry macaroni before cooking it. Then I put cooked macaroni in a 2 quart casserole dish and added 1 can tuna, 1 can of low fat cream of chicken soup, salt and pepper. Then followed the rest of the directions. It was perfect! The two of us had the entire thing finished in minutes. I really liked the french fried onions on the top as well. It really gave it a nice flavor.

Apple Betty

YUMMY! I changed it a little bit because I don't like too many apples. I sliced up 3 large granny smiths and kept the rest of the recipe the same so I had lots of crumbly topping. Also I sprinkled some cinnamon on the apples before putting the topping over them. I served it warm out of the oven with some low fat whipped cream on top. My boyfriend and I finished it off in about 5 minutes.

Pizza Pinwheels

These were pretty good. I used ham instead of pepperoni and spread a thin layer of sauce on the dough before putting on the meat and cheese. They were too soft to cut into pieces after rolling so I left them as "logs" and closed up the ends so the sauce and cheese would not spill out the sides.

Black Russian Cake I

This was fantastic! I made it as a birthday cake for my boyfriend's mother and it went over very well. The only change I would make is in the glaze. After sifting the powdered sugar over this cake it soaked in and didn't look very pretty. The sugar on the cake turned a brown color and all around the cake plate was white icing sugar. Also, the glaze mixture didn't cover the entire cake. I think next time I will add 1/4 cup more powdered sugar to the glaze and skip sifting the powdered sugar over the top entirely. My boyfriend suggested that next time it might look better if after putting the clear glaze on and letting it cool, that I make a second glaze in a thick white or chocolate and pour it over the top so that the edges drizzle down. I think I will try that next time.

Fluffy French Toast

I really enjoyed this french toast. I've never added sugar or flour to french toast before and because of the sweetness from the sugar I didn't even need syrup and it tasted great on it's own. Something else I noticed was that the mixture was more evenly mixed then my usual recipe. Normally by the time I get to the last couple of pieces it's just the thick egg whites left behind and the french toast comes out very "eggy" but I didn't get that with this recipe. Everything was so smooth and well blended. I think the flour may have contributed to that. This will be my french toast recipe from now on.

White Chocolate Macadamia Nut Cookies IV

These were great. I made bigger cookies (I got 19 out of the recipe) and had to cook them an extra 3 minutes. I have no idea how anyone could get 4 dozen cookies from this recipe. Also, I used slightly less nuts then the recipe called for and white chocolate chips instead of chopped chunks. I had my first cookie when it was warm but it was much better the next day when it had completely cooled. It seemed to have a better flavor and texture. The only thing I didn't like was that the chips browned on the bottom of the cookie so they didn't look too pretty looking at them from the bottom.

Chicken Supreme III

I wouldn't serve this to guests, it was very sloppy. I really liked the taste of it but my boyfriend who isn't crazy about stuffing thought it was just ok. I cut the chicken into bite sized pieces, substituted onion for garlic and spices. I used poultry seasoning, celery salt, salt, pepper, and paprika. I only had a can of low fat cream of mushroom which I used instead of cream of chicken and I only used 1/2 cup of margarine. I will make this again when I'm craving a turkey dinner but don't have the time.

Carrot Cake III

This carrot cake was so delicious. I halved the recipe and filled an 8" round pan but there was still batter left over so I put the rest in a muffin tin and got 4 big muffins out of it. I cooked the muffins for 20 minutes and the cake for 40. I didn't add pecans to the icing because I didn't think it needed them. I may put some pecans or coconut on top of the iced cake next time for decoration.

Bake Sale Lemon Bars

These were good but I found them to be too thin. They seemed more like cookies then bars. I think next time I would make them in an 8 x 8 pan, split the crust part of the recipe in half, and keep the measurements for the lemon filling the same. I think I would also add more lemon juice as well because it wasn't lemon tasting enough.

Red Enchilada Sauce

I was a little disappointed in this sauce because it smelled so good when I was making it and it didn't taste the way I expected it to. I should have listened to the reviews and added more chili powder. (at least another teaspoon) I also found that most of the sauce evaporated while it cooked and left the tortillas a little dry. If the sauce was spicier and if I had used a smaller pan and less enchiladas (I made 8) I think it would have been perfect.
