Bailey's Sundae Coffee Drink

Reviewed: Jun. 28, 2004
I make something similar to this but use whipped cream on top instead of the ice cream - it didn't taste all that different. The only thing was that the ice cream cooled the coffee to almost room temperature. I didn't mind that though. It was very good and I would make it again.

Toffee Chunk Cheesecake

Reviewed: Jun. 21, 2004
I used a whole 250g box of vanilla wafers for the crust and exactly 50 caramels for the sauce. And as per reviewers suggestions, 1)I used a larger (9 1/2 inch) springform pan. 2)I used 3 1/2 skor bars instead of 3 and mixed it in the cheesecake batter rather than under it. (I still used pieces from 3 bars for the top though) 3)I put 3/4 of the sauce on the crust and used the other 1/4 for drizzling over the top and sides of the cake. 4)I used a thermometer to get the internal temperature between 160 and 165 degrees and it took 1 hour and 45 minutes at 225 degrees rather than the 1 hour listed in the recipe. It came out perfect in every way and everyone was so impressed they were taking pictures of it. Thanks to Nancy and the reviewers for making this my favorite cheesecake ever.

Banana Coconut Loaf

Reviewed: Jun. 16, 2004
The banana bread itself is nothing spectacular, it's a little dry. It's the extras - the coconut, nuts, and cherries that make it great. I would like to try adding those extras to one of my favorite banana bread recipes to make a really good one.

Cottage Cheese Bread II

Reviewed: Jun. 16, 2004
This is one delicious tasting bread and the texture is perfect. It was so soft out of the bread machine and made great crunchy toast. I added one tablespoon of dill seed and will definitely add it every time. This bread, (like other cottage cheese bread machine recipes on this site) rises way too high (even after cutting back on the yeast). I'll have to keep playing with it to find out the correct measurements of yeast and sugar I should use. If I could just get the loaf to stop rising so high, it would be a perfect 5 star recipe.

Sloppy Joes II

Reviewed: Jun. 8, 2004
This was our first experience with sloppy joes. I wanted to give this 3 stars and my husband wanted to give it 5 so I'm giving it a rating in between. I thought it was too sweet but I like that it uses ingredients that I usually have on hand.

Baked Dijon Salmon

Reviewed: Jun. 8, 2004
I was really disappointed in this recipe. I would prefer my regular grilled salmon over this baked one any day. Since the salmon wasn't marinated, it had a bit of a fishy taste and the crumb mixture got a bit soggy tasting. It was ok but I don't think I'll make it this way again

DOLE® Ambrosia

Reviewed: Jun. 8, 2004
I made this without the oranges and pineapples and used low fat peach yogurt and it was really good. I wasn't too crazy about the marshmallows though and picked most of them out. I loved the toasted coconut, it tasted great and made it look really good.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Jun. 8, 2004
These were the best chocolate chip cookies I have ever made!!! I cut the recipe in half and used 1 whole egg instead of half an egg and half a yolk, regular butter instead of unsalted, and raspberry chocolate chips instead of semi-sweet. I made 6 really big cookies instead of 9 and baked them for 20 minutes. I will make these again and again for everyone I know.

Fried Cinnamon Strips

Reviewed: Jun. 5, 2004
What a fun, fast and easy recipe! I used kitchen scissors to cut my overlapped tortillas into strips. Just make sure you really watch the strips while you're frying them. They should just have a hint of a golden color and be slightly puffed. I overbrowned a couple of batches (they weren't even very dark) and had to throw them away because they had a burnt toast taste.

Flourless Peanut Butter Cookies

Reviewed: Jun. 5, 2004
This is the easiest cookie ever! I still prefer the regular cookies with flour though because I found these too be a little too peanut buttery tasting and I could detect the crunchy texture of the sugar. But if you love peanut butter you will love these. I probably could have baked them for a little bit longer because the middle didn't seem completely cooked, even after they cooled. Also, let them cool completely because otherwise they don't taste as good and will fall apart.

I left out the corn, mushrooms and barley and added some soya sauce for flavor. It's quite tasty.

Mike's Favorite Grilled Cheese

Reviewed: Jun. 3, 2004
I love these sandwiches! I like to experiment with different types of bread and cheese. You've got to try it with rye caraway bread or egg bread, it's the best! It's also yummy if you put some cooked bacon between the two cheese slices.

Cinnamon Honey Butter

Reviewed: Jun. 3, 2004
This was very good on my toast with a great spreadable texture. I expected more of a cinnamon toast taste but it didn't taste much different from plain honey. I think I'm going to try adding more cinnamon next time and a little less honey.

Funnel Cakes II

Reviewed: May 30, 2004
I used my largest funnel and the batter still wouldn't flow through, I finally had to pour it out from a measuring cup. I think it needed some more milk or less flour so that it would be thin enough to get it through the funnel. I first tried this recipe in a deep fryer but that was a big mistake, I ended up with little funnel pieces instead of cakes and it tasted like I was eating fish batter. The second time I tried it in a frying pan but maybe the oil wasn't hot enough because it came out flat like a pancake and the swirls of batter just blended together. The taste wasn't anything spectacular until I put a scoop of ice cream and caramel sauce on top - now that made it fantastic.

Hawaiian Bread II

Reviewed: May 30, 2004
This is one of my new favorite bread recipes! I adapted it for my bread machine by cutting the recipe in half. I noticed that there was no salt in the recipe so I added 3/4 of a teaspoon just to be safe and the loaf came out perfect. I used 1 and 1/4 teaspoon of bread machine yeast, 1 egg and substituted coconut extract for the vanilla extract. I baked it on the regular crust sweet bread setting. It was so sweet and soft - almost more like cake than bread. It also made great toast. Delicious!

Garlic Butter

Reviewed: May 27, 2004
This garlic butter is very good. I spread it on a pizza crust to make garlic wedges. I used garlic powder instead of the minced garlic because I didn't want a strong garlic flavor and omitted the salt because I figured it would be salty enough with the parmesan cheese. I would definitely make it the same way again!

Breakfast Pizza I

Reviewed: May 24, 2004
What a great idea. I used a pizza crust with dough I made in my bread machine instead of the crescent rolls and ham and bacon in place of the sausage. I found it to be very eggy tasting - almost like a frittata. I am personally not a big fan of eggs so I wasn't really too crazy about it but I'm sure a lot of egg lovers out there would love it.

Luscious Lemon Cake

Reviewed: May 24, 2004
This cake is delicious! However it broke when I tried to take it out of the bundt pan. I wasn't sure if I was supposed to pour the glaze over top while it was still in the pan (that's what I did) but I wouldn't do that again. Also it's a very crumbly cake. I haven't gotten a solid piece out of it yet without it falling into crumbs. The first night we found it too lemony but about 24 hours later the taste was perfect. If I make this again I'll definitely have to play with the recipe a bit so that I'll have a firmer cake. Maybe less water? As it is, I would never serve it to company.

Yummy Margaritas

Reviewed: May 24, 2004
These are just as good as what you would get in a restaurant. However I found that they had a bitter aftertaste. I tried adding some sugar but it didn't help. It might be because of the beer I used (Stella Artois) or because I was a little short on ice cubes (by almost a cup). I'll definitely be trying these again but with more ice and a different type of beer.
