Easy Coq Au Vin

This was a quick and easy recipe. I cut the recipe in half and used 5 skinless chicken legs. It smelled great and tasted great but I found that there was hardly any gravy at the end and it was really thick and gooey looking.

Spicy Hot Chicken Legs

Chicken legs are one of our least favorite meals (which is why I didn't give this recipe more stars) but this was a really good recipe. We didn't dip in the blue cheese dressing or bake in the oven to finish them off and I would make them the same way again. It didn't smell too great while it was cooking but tasted good (had the flavor of mild chicken wings).

Best Brownies

I did a taste test with another brownie recipe from this site (chewy cocoa brownies) and these were definitely better (the others were very good though). The only thing I did differently was to ice them with the german chocolate cake frosing II recipe from this site instead of the frosting listed. I'm sure this frosting is terrific but we wanted something different and we weren't disappointed. Will make these again and again.

German Chocolate Cake Frosting II

Great frosting for brownies! I cut the recipe in half and I used it to frost both an 8 x 8 and 13 x 9 inch pan of brownies and it was a perfect amount. I used sweetened condensed milk in place of the evaporated milk and sugar but I found it a little runny before I started frosting so I added more coconut and some powdered sugar to thicken it up a bit. It had a bit of a milky taste while it was still warm but once it cooled it was fantastic. I've been keeping my brownies (with this icing on them) in the freezer and eating them frozen and they taste even better.

Burnt Butter Rice

I really liked the flavor that the burnt butter gave the rice. It's very subtle and goes well with anything. However I followed the directions exactly and the rice was still crunchy after standing for 15 minutes. I had to take the lid off and add a bit more water and cook longer. Next time I would simmer for 20 minutes at the beginning instead of 15.

Baked Pork Chops I

Carrots Au Gratin

I don't like carrots but this recipe was quite good. (kind of like a baked macaroni and cheese but with carrots instead of pasta) I think next time I'll try it with broccoli or cauliflower. I didn't add the onions and used crushed croutons instead of the crackers. Also I used seasoned salt instead of regular salt and light old cheddar instead of the processed cheese.

Lemon Cream Cheese Frosting

Lemon Bundt Cake

This didn't work out for me at all. I used mini bundt pans and baked at 325 degrees for 25 minutes and the cakes completely stuck to the pan. I tried taking a couple of them out while they were warm and the rest after they had cooled and it made no difference, they broke into pieces. I have used this pan for many bundt cake recipes and have never had this problem before. Also, it didn't taste any different from the regular recipe that I normally follow at the back of the cake box when I make a layer cake (I always get the pudding in the mix one anyway). Next time I will make cupcakes out of this recipe, use baking liners, and spread with "lemon cream cheese frosting" (from this site).

English Muffin Bread

This is very similar to english muffins except that it lacks the sour taste. We really enjoyed it toasted with butter. I cut the recipe in half and made the dough in my bread machine (using 1 and 1/2 tsp of bread machine yeast) I noticed other reviewers added sugar and margarine to adapt it to the bread machine but I didn't find that it was necessary. I then I took out the dough, put it in a loaf pan (letting it rise for another 15 minutes) and baked as per the recipe instructions. We will definitely make this again.

Honey Glazed Pea Pods and Carrots

Pecan Tarts

I didn't realize that this recipe was for the mini muffin cup pan and since I had some regular sized frozen tart shells in my freezer I used them instead and just followed the rest of the recipe from the filling on. However, I made a mistake and filled them without baking the shells first and ended up having to bake the filled tarts for 25 minutes. Not that it was such a bad thing, in fact we liked them even better, they turned out really chewy like candy and the filling baked into the pastry part and gave the crust a really nice taste.(they were a little difficult to get out of the aluminum shell though because they bubbled slightly over the edge - had to use a fork - so I wouldn't make them like this for company) I will try these again, but bake the pastry part first to see the difference. It made 7 regular sized tarts.

Grilled Teriyaki Tuna

We really enjoyed this. We marinated for 8 hours and cooked for a total of 4 minutes on the George Foreman grill. I think next time I would do it for 3 minutes though because we like ours a little more rare.

Aunt Millie's Broccoli Casserole

Holy pepper! All I could taste in this was the pepper and it ruined it for me. Without it, I would have really enjoyed this meal. I used light old cheddar for the cheese and low fat soup and added a tsp of mustard powder. I cut the recipe in half and used an 8 inch square pan. Will try it again but omit the pepper.

Whole Wheat Beer Bread

I'm not a big fan of whole wheat bread so maybe that's why I found this a little boring. I regularly make a different version of beer bread with all white flour and I add lots of cheddar, parmesan cheese and parsley. Unfortunately this recipe doesn't come close to that one. I found the dough a bit wet when I was putting it in the pan and had to sprinkle additional flour on top to press it down. Halfway through baking I spread a garlic butter recipe that I got off this site (submitted by Denyse) over the top to give the top of the loaf a prettier appearance and a little more flavor. I also spread it on the warm bread slice and it really improved it for me.

Captain Crunch Chicken

I tried something like this at Planet Hollywood which I loved. These were almost as good except that the coating at the bottom of the chicken melted off as it baked. Maybe it's because I ground the cereal in my handy chopper instead of crushing it in a bag (it might have been too fine) I used chicken fillets instead of the breasts and I would do that again next time (they took 35 min to bake). We dipped these in dijonnaise and it was the perfect sauce for them.

Poppy Seed Bread with Glaze

I didn't have any butter flavored extract but it was still great. The glaze really sweetens the loaf and gives it a very unique taste. In my opinion, it's the glaze that makes this special and it would be just like any other poppy seed bread without it.

These were quick to make and tasted good too. I made mine a little bit bigger than the recipe called for. We found the butterscotch chips to be a little overpowering and a little too sweet so I think next time we'll try the recipe with some semi-sweet chocolate chips instead.

Graham Cracker Muffins

These were a little plain for me. I would like to try them again with nuts and chocolate chips or maybe even put some jam in the middle. They were really easy to make though. I used skim milk and they turned out fine.

Easy Focaccia

We loved this bread! I think it's my new favorite. I used my bread machine to mix the dough and set it at the dough setting (I added an additional tbsp of rosemary to the dough ingredients). Then I took it out and finised it off according to the rest of the directions. I also sprinkled some sea salt on top. After I baked it, I cut the bread in strips and dipped in olive oil and balsamic vinegar. It was the best!!!
