Cranberry Sauce

Reviewed: Oct. 20, 2006
Great cranberry sauce. The difference is the orange juice. Just make sure you make it the night before and let it thicken in the fridge. Next time I would cut down the recipe to a half or even a quarter because I had way too much and had to throw a lot away.

Homesteader Cornbread

Reviewed: Jul. 7, 2006
I followed the recipe exactly as written and it turned out really well. However I found it to be a bit bland tasting, it just seemed to be missing something - spices maybe? Good basic recipe, but I'm going to keep looking for something with a little more flavor.

Cracked Wheat Oat Bread

Reviewed: Jun. 18, 2006
This bread didn't rise very high and didn't have a lot of flavor. We wouldn't make it again.

Magic Cookie Bars I

Reviewed: Jun. 18, 2006
They came out a lot flatter then I expected but they were good like that. We left out the nuts and put the milk under the coconut and chocolate chips so everything would stick together better. It worked quite well and had a much nicer appearance. We froze them after the first day and we are eating them straight out of the freezer. We're liking them better cold then at room temperature.

Easy Guacamole

Reviewed: May 26, 2006
This recipe was great! We will use it every time we have company over. When I make it for myself I omit the garlic and onion because that's the way I like it.

Great taste for something so simple. Served with white rice. We will definitely make this again.

Cherry Pound Cake

Reviewed: May 22, 2006
I wish I could give this cake more than 5 stars. It is fantastic! I used light cream cheese and used lemon extract instead of the almond extract. I made a glaze with the cherry juice and icing sugar and drizzled it on while the cake was still warm. I can't wait to make it again!

Hello Dolly Cookies

Reviewed: May 21, 2006
They tasted good but didn't hold together at all. Most Hello Dolly cookie recipes add the butter to the graham cracker crumbs only and then sprinkle the other ingredients on top. I've never had this problem with those cookies falling apart. We had to eat all the crumbs with a spoon.

BBQ Meatballs

Reviewed: May 19, 2006
I made this for my husband and he really liked it. I didn't use a slow cooker but instead let the meatballs simmer in a pot on the stove for 1 hour. I served them over white rice. Very easy.

West Indian Chicken

Reviewed: May 6, 2006
I omitted the vegetables and used chicken legs instead of a whole chicken. It was really good, but if you don't like a sweet sauce forget this one. I will make this again without the vegetables.

Barbecued Shrimp

Reviewed: May 1, 2006
I only had 1 pound of shrimp so I scaled down the recipe to 1 serving (which actually served 2 people). I'm not sure why this is called "barbecued" shrimp since you don't bbq them and there is no bbq sauce in the recipe. We kept the shells on so we could peel and eat and then dipped them in a bowl of the sauce that I poured out of the pan after cooking. It was a fun meal. It wasn't very spicy though so next time I would add much more hot sauce.

Dill Dip III

Reviewed: Apr. 29, 2006
Easy to prepare with very few ingredients. No more dip seasoning packs for me! I don't like onion so I left it out but if I make it for company I will put it in because without it, there's something lacking.

Dad's Double Whole Grain Pancakes

These were delicious. They were a little flat but I think if I added less water they would be too dry.

Creamy Pesto Shrimp

Reviewed: Apr. 26, 2006
Not really what I was expecting but we enjoyed it. I thought that the sauce would be creamy since the recipe is called "creamy pesto shrimp" but it was actually very clumpy. I don't know if it was because I used low fat parmesan or if that's the way it was supposed to be.

Pina Colada Cake III

Reviewed: Apr. 24, 2006
Very good cake, but I prefer the golden rum cake recipe (also on this site). I didn't have cream of coconut so I omitted it in the batter and used a small can of sweetened condensed milk in place of it for the glaze. I used a 19 oz can of crushed pineapple and put the juice in with the cake mix etc. before blending, then stired in the rest of the pineapple afterwards. I used coconut flavored rum in the cake and in the glaze I used pineapple flavored rum. I toasted 1 cup of coconut in the oven for 5 min and then put it in the bottom of the bundt pan before pouring the batter on top. That was our favorite part of the cake and I would definitely recommend trying it. I baked for 1 hour at 325 degrees. It really does taste like a pina colada!

Cracked Wheat Bread I

Reviewed: Apr. 24, 2006
I used honey instead of brown sugar. I used the dough setting on my bread machine and then took the dough out and put it in a 9x5 inch pan to rise for 30 minutes. Then I baked for 40 min at 350 degrees. It was very good except maybe a little dry. I might put a bit more water in next time.

Linda's Lasagna

Reviewed: Apr. 19, 2006
This was a really good basic recipe. I don't like a lot of vegetables in my lasagna so I really enjoyed it, however if I made it for company I might add some chopped spinach to the cottage cheese mixture. I didn't have any tomato paste so just used the crushed tomatoes and only added 1/2 cup of water. I also didn't add the sugar because I didn't find it necessary. I can't imagine it being any better but I can't wait to try it the next time as the recipe is written.

Pignoli Cookies I

Reviewed: Apr. 9, 2006
I'm not sure what went wrong. Maybe I should have read the reviews first about refrigerating before rolling into balls. I found the dough too sticky to roll and had to drop it by the spoon onto the parchment paper. They came out flat as pancakes and we weren't too crazy about the taste either. We ate part of it with a fork and threw the rest in the garbage. What a waste.

Fishboy's Beer Belly Shrimp

Reviewed: Nov. 14, 2005
We made a few changes because we wanted peel and eat shrimp. I followed the recipe for the marinade (step 1) but instead of putting the shrimp on skewers, I put the liquid from the bowl in a wok and boiled it and then added the shrimp and cooked them until they turned pink. Then I tossed them in a sauce made of butter and cajun seasoning. They were great!

Pumpkin Crunch Cake

Reviewed: Nov. 12, 2005
This was really good. It kind of reminded me of bread pudding. I used pecan halves instead of chopped pecans because I thought it looked better. Also, I didn't use the whipped topping because I liked it so much on it's own. I'll definitely be making this again.
