Cheesy Chicken Meatballs
This was a great recipe!! I didn't follow it to a T but I used it as a base. Here are the modifications I made. I used 1 egg, olive oil in place of vegetable, instead of 1 TBSP garlic powder I only used 1 tsp garlic powder and added about 4 gloves of fresh garlic (grated). I also used plain low fat cream cheese, because I couldn't find the garlic roasted one. And instead of Italian seasoning (because I didn't have any) I used fresh basil (about 2 tsp), 1/2 tsp dried parsley, and 1/2 tsp dried oregano. I got about 12 meatball from this because I made them pretty big, and I stuffed fresh mozzarella cheese in 1/2 of them. I also used an ice cream scoop and a spoon to form the balls - to keep hands clean and get them rounded pretty good!. I baked them on 425 for about 25 minutes (my fire alarm usually goes off if my oven is over 400 so I'm surprised I was able to get it to 425). Then I threw them in my pot of marinara sauce for about 10 minutes. They were amazing! Definitely a keeper! Thank you for sharing!

I made this today and it was a really good base recipe. I did make some minor changes. I used dried herbs rather than fresh because that's what I had. I omitted the kidney beans, zucchini, and wine just a personal preference. I added 3 red potatoes and a can of petite diced tomatoes. I also used about 2.5c vegetable broth, 1c chicken broth, and 1c water. The broth came out a little thicker then I would have liked, probly because of the potatoes but I came out delicious. I think next time I'll just cook the noodles in the soup that way they'll cook in the flavor.. I also think I'll add more seasoning next time cuz I feel like it was still missing something! But overall delicious!

Southwestern Egg Rolls
I thought these were amazing!! I left out the corn because I didnt have any and didnt put the beans in because I dont like beans.. But other then that followed the recipe exactly as is and these were amazing. I used egg roll wrappers instead. I also fried some and baked others based on other reviewers and the fried ones are 100x better! I'll definately be making these again!
