Gluten-Free Orange Almond Cake with Orange Sauce

I tested out this cake in hopes of serving it for my mother-in-law's birthday. She is allergic to wheat, soy, and potatos. Its very hard to find any recipe for a cake that fits into her needs. This cake was just okay in my opinion. The flavor was good but the almond flour made it very grainy which was not very pleasant to eat. It was rather heavy and dense as well. The orange sauce was very tasty but it seperates fairly quickly so you really do have to make and serve it immediately. After much more testing, I ended up making a lemon sponge cake roll using rice flour and filled with homemade whipped cream/lemon curd for her that was really nice. This recipe had good flavor, just really bad texture that no one I tried it on liked.

Mini Cheesecakes III

All I can say is WOW this was good! I wanted to make my husband a cheesecake for Father's Day but I didnt want to make a whole one. We are on a diet and we would eat a whole cheesecake if I made one. lol This was definitely the right recipie though! I tried this one because it has a graham cracker crust instead of the vanila wafer crust used in other similar recipies. They tasted just wonderful. It was easy to control portion size so we didnt go too crazy on the calories but we still got to eat some very tasty cheesecake. It was a very elegant presentation too. After they were cooled in the pan, I ran a thin knife around the edge and they came out easy. I served them graham cracker crust side up and drizzled on some sugar free strawberry glaze. My husband got his favorite desert to make him happy and we didnt have to completely wreck our diet to do it. I cant recomend this recipie enough if you want a delicious and authentic cheesecake taste in managable portion size.

Shrimp Scampi Cheesecake Appetizer

I served the filling in the small phyllo pastry cups as suggested by another reviewer and everyone enjoyed them. I baked them in the shells as directed on the back of the phyllo shells box for time and temperature. Very tasty recipe!

Asian Beef with Snow Peas

This was very tasty. We marinated the thin beef strips for about 30 min and added broccoli and cauliflower instead of the snow peas. Highly recommended.

Lemon Chicken II

Really tasty! I added about a tablespoon more of each lemon juice and cornstarch. I cut up some large pieces of ginger to steep in the sauce while it was warming through and I also used some lemon marmalade I made earlier this year instead of the cut up fresh lemon. Everyone really liked it. The flavor of the chicken was right on and with the sauce it was just wonderful.

Peanut Choc-Scotch Fudge

This fudge was really tasty and easy to make. The only thing I changed was I lined the pan with foil instead of greasing it and it came out great.

Pumpkin Pear Strudel

This recipie is just outstanding. I have been awaiting the arival of fall with much anticipation and this recipie is a yummy fall time treat for sure. I was concerned there was going to be too much spice in it but it was just right. The most time consuming part was peeling and dicing the pears. It went together very quickly and came out delicious and so very beautiful. It is best eaten warm out of the oven but I have been eating it cold and its still very good. It is a nice change from the ordinary fall/winter time desserts like pumpkin pie. It would be a very nice presentation as a holiday dessert. I really enjoyed making and eating this recipie.

Pork Chop Casserole III

This recipe was just great! This was a last minute dinner and I only had 1 can of soup on hand. So, I just used one can of soup plus 2 cans of water and it still came out really yummy. I will definitely make this again and next time I will try it with both cans of soup.
