Chocolate Chip Banana Muffins

While I was making this, I had my doubts that it would turn out. The muffin batter was very stiff and I could barely mix all of the flour in with the wet mixture. However, after adding the mashed banana, the consistency was great, and the finished product was absolutely delicious. I made mini-muffins. My kids devoured them at breakfast and asked for more in their lunchboxes! Now that's a keeper!

Veronica's Apple Pancakes

This is an awesome recipe! What a great way to get more nutritious fruit into my kids' diets! I did use 3/4 cup of whole wheat flour instead of all white. I also increased the cinnamon to 1/2 tsp. and added a couple tablespoons of wheat germ. I also added a bit more milk so the batter wasn't quite so thick. The pancakes were absolutely delicious, and my one picky eater even ate them plain without syrup. Hooray!

Self-Filled Cupcakes I

I love this recipe! It is my standard cupcake recipe anytime I need to bring a dessert to an event because it gives such a big payoff for so little work. Plus, it's versatile! I have followed the recipe to the letter and had great results, but I've also done different chip and frosting combinations, too: peanut butter chips with peanut butter frosting, mint chocolate chips with mint chocolate frosting. They're all great! As stated previously, this recipe really makes at least 24 cupcakes. And I usually put double the filling in the cupcake and it turns out great. Even with the doubling, I usually still have filling leftover, so I follow one reviewer's advice and put it in mini muffin tins and bake so I have several mini cheesecakes. Thanks for a definite keeper recipe!

Mouse's Macaroni and Cheese

The flavor on this was good, but my sauce turned out too watery, even after baking. I think this might be because I used skim milk. So next time, I will use more macaroni and less milk. I think I'm also going to skip the bread crumbs and use something else instead~ crushed corn flakes or grated parmesan or something. I did take the cover off and bake for 5-10 more minutes so the top would get a little more brown and crusty, too.

German Apple Pancake

I made this for company, despite the fact that I'd never tried it before, and I was so impressed by how easy it was! It presents very well, too- it looks like you spent much more time on it than it really takes. And it tastes delicious! I used a slightly bigger cast iron skillet, 2 Granny Smith apples, and just liberally sprinkled powdered sugar onto it. It's a keeper!

Alyson's Broccoli Salad

Boy, do I love this recipe! It is so easy to make and so delicious! I usually use turkey bacon (cook it in the oven so it's crunchy enough) and a little less fat free mayonnaise. Sometimes I haven't added the sunflower seeds either and it's still great. Thanks!

A Nice Slow-Cooked Pork

I'm not a big roast fan, but my husband is, so I made this, knowing that it was right up his alley. Well, he absolutely RAVED about it. The pork was melt in your mouth, the potatoes were cooked perfectly tender, and the mushrooms and pearl onions were nice complements. Next time, I might even go a bit overboard and take some of the juices and make a bit of gravy to go with the pork for a very traditional Sunday dinner. Add some rolls and presto~ the perfect meal. Thanks!

Oatmeal Raisin Cookies I

I am not a big oatmeal cookie fan in general, but the rest of my family is, so I made this recipe exactly as written, with one exception. Instead of making the cookies with teaspoonsful of dough, I used a slightly overflowing tablespoonsful, and then I cooked them for one or two minutes more. My husband declared them delicious and my kids all scarfed down their allotment in minutes. Thank you!

Tasty Cabbage Salad

I love how extremely easy this is to make and how nice that the ingredients are pretty limited and ones I usually have on hand in my house. The dressing has a nice flavor to it. I halved the entire recipe but still added one whole can of chicken and two packages of ramen. Next time, I think I might try adding some almonds and/or cherry tomatoes. Thanks for the recipe!

Spiced Pumpkin Seeds

These are wonderful! My whole family loves them~ even my three year old daughter was gobbling them up. They didn't last even a day. I really love the spices because they give the seeds an extra kick that makes them delicious. Thanks for sharing the recipe!

Italian Confetti Pasta Salad
