Sopapilla Cheesecake Pie

Great recipe. I was looking for a Mexican dessert for an impromptu Mexican dinner at my house. I had the ingredients for the recipe on hand, it was easy/quick to fix and the outcome was a hit with my dinner guests.

Pumpkin Fluff Dip

Did not care for this recipe. Took to a social function where I served with ginger bread and shortbread cookies. While sampled, I took home most of the recipe. I served the next day at a smaller gathering (with no other sweets) and again, sampled but not the hit of the group.

Bean Burrito Casserole

Good and easy recipe. Several of my friends are now using recipe as well. I use Cream of Chicken Soup and increase the sour cream to a full cup. Finally I mix in a can of chicken with the soup and sour cream before I pour over the burritos. Add a salad and we have a quick and easy meal. Of note, I did try this recipe using Cream of Mushroom Soup and a pound of browned ground beef but prefer the chicken.

No Bake Peanut Butter Pie

I've been making these pies for several years now. I originally used the graham cracker crusts as specified in the recipe but now use Oreo cookie crusts. I also "stripe" the top with chocolate syrup and use a knife to make a design on top. I especially like that the recipe makes two pies so that I can use one and freeze the other. Great recipe.

Spicy Seafood Shell Appetizers

Outstanding recipe. It was a hit at my Christmas Eve get together. Even my friend who is comparable to a chef requested the recipe. Not one for canned seafood, I used fresh shrimp and imitation crabmeat (a first for me but small portions of crab unavailable). I also used the pre-made phyllo shells. Excellent!

Brown Sugar Smokies

Great recipe and very easy. I roll the smokies with bacon in advance and freeze. The day before I plan to serve the dish, I defrost in the fridge and "cake" on the brown sugar until smokies are totally covered (as recommended by another reviewer). I then place in the fridge over night to let the brown sugar melt. Always a hit!

Buttery Cooked Carrots

Quick and easy recipe. The first time I made this I followed the directions exactly. The second time I steamed the carrots in the microwave until slightly tender. I then poured off steamer water leaving enough to cover the bottom of the container. I then added the brown sugar and butter and microwaved until butter melted. Finally, I mixed in the carrots and microwaved to desired tenderness. After cooking, I left the top on container ready to serve.

Amazing Pork Tenderloin in the Slow Cooker

Outstanding and easy recipe. After cooking was complete, I added cornstarch to the liquid for gravey instead of "au jus". This was a hit at my dinner party.

Coconut Cream Cake II

Easy to make, very moist and not overly sweet. I made it for an adult get together and received kudos - even from the guys. The cooking time was closer to 35-40 minutes.
