Brown Sugar Meatloaf

Reviewed: Jan. 8, 2009
Very good. I followed others advice and put the ketchup and brown sugar on top and used less of the brown sugar. I also used onion soup mix. Turned out excellent, everyone loved it and had seconds. I will make this again.

Easy Slow Cooker French Dip

Reviewed: Jan. 24, 2008
This was easy to make and has great flavor. I used a dry french onion mix, half the amount of beer and double the amount of beef stock. Also added onions and some Worcestershire sauce. Be sure to remove as much fat as possible or it will be very greasy. I will make this agian for sure, thanks!

This is the best sloppy joe dish I have ever had! Everyone raved. It's very easy to make. I made it with the spicy sweet potato fries recipe found on here. It was so good I will never make Manwich again.

Artichoke Spinach Lasagna

Reviewed: Aug. 22, 2007
I thought this was very good. One thing I like to suggest to those who want to sub the tomato based sauce for alfredo, I'd like to politely suggest not to do this, mainly because I know where you are coming from. I was brought up on very creamy, rich and high fat foods and found it hard to try things that were not. But really, if you try it as is it is sooo good and just profoundly healthier for you and your family. Especially if you can also use a lower fat cheese.

Shrimp with Tomatoes and Feta Cheese

Reviewed: Aug. 20, 2007
Delicious, the only thing I would do different is add more tomatoes. This was a nice change from chicken and beef.

Spicy Baked Sweet Potato Fries

Reviewed: Aug. 14, 2007
This was good but it is tricky to get the fries to be crispy, but not burnt. Mine were half and half. I would say follow the others suggestions about lower heat and oil the pan and I would add that you have to stay by the oven and be vigilant, turn them often with a metal spatula, also be careful not to cut the fries too thin, 1/4 inch is good.

Grilled Salmon Skewers

Reviewed: Aug. 10, 2007
Loved this turned out great. The only changes I made was the ginger, I didn't have fresh, so I used powdered and only little a couple pinches since I don't like when it overpowers the flavor of things. Also I did not have rice vinegar so I used cider vinegar. We loved it and will definitely make it again. Thanks for the great recipe.

Black Bean Salsa

Reviewed: Aug. 7, 2007
This is a good base but needs a little kick, I added some cumin, minced garlic, chili pepper and lemon. I also used fresh tomatoes since they are in season right now. I love how colorful this dish is it really brightens up a plate.

Bruschetta III

Reviewed: Jul. 6, 2007
This was very good and easy to make, use fresh ingredients when possible an it will be that much better. The only thing I disagree with is the amount of olive oil, you will need more than a tbs otherwise it is great! Oh and we cooked it on the grill outside. I just put the slices on foil, set it on the top shelf ,on low heat and closed the grill. Turned out great but watch it close.

Chocolate Bourbon Pecan Pie

Reviewed: Nov. 24, 2006
This pie was delicious, I made it to take for Thanksgiving dinner. I took others advice and cut down on the sugar, bourbon and chocolate chips. This made it just right not too sweet or over powering bourbon flavor. I will make this again for sure. Everyone loved it.

Jambalaya II

Reviewed: Oct. 17, 2006
This was very good, I used a rotisserie chicken from the store since I just bought it, this saved a lot of time. For broth I used swanson natural goodness chicken broth. I also added a little diced ham and used lite smoked sausage. The lite sausage did not seem to affect the taste at all. Since all the meat was already cooked I just skipped the first part of the recipe and went straight to cooking the onions and green peppers. I didn't make it too spicy and my son liked it a lot. I will make this again.

Baked Chicken Nuggets

Reviewed: Sep. 25, 2006
Great flavor, the only thing I changed was the butter..instead I used egg whites to dip the chicken in to try to make it a bit lower it fat. This did not seem to hurt the flavor at all. For a good low fat dip I used some salsa.

Hot Fudge Pudding Cake I

Reviewed: May 31, 2006
This is an excellent quick dessert, for those who like rich chocolate.A small serving is very satisfying, no need for a huge amount so it's nice that it's a small batch. My son really liked it. I used pecans since that was all I had and it worked just fine. Try to have it with ice cream if possible.

I made these Christmas morning and they were a big hit. I left out rasins and used pecans instead of walnuts. Now I have a new Christmas tradition.

BBQ Chicken Pizza I

Reviewed: Oct. 6, 2002
Great recipe, turned out wonderful for me but I can see where using different BBQ sauces and even the pizza dough can make a huge difference. I used a Pillsbury refrigerator dough and prebaked it for 7 minutes then added topping and baked for only about ten more minutes. I also had to substitute the cheese using a mix of Monterey jack and mozzarella. The pizza dough turned out very crisp and seemed to make it less messy to eat but those who don't like crisp crust may not want to try this type of dough or just be sure that it's not spread too thin. My eight year old liked it okay. I loved it. Watch the cilantro it can be overpowering. I would use less than the recipe calls for.
