Blueberry Zucchini Bread

This was better than I expected. Yum! I followed the recipe almost exactly: I substituted some apple sauce for a portion of the oil. Because of what I had on hand, I used 1/2 whole wheat flour and 1/2 white flour, and 1/2 white sugar and 1/2 brown sugar (and I decreased the total amount of sugar used). I made one normal-sized loaf, and some muffins. I made a crumb topping (oats, brown sugar, corn meal, flour and margarine) for the muffins. So good!

Strawberry Vanilla Pancakes

these were great, but like most people, i altered the recipe: i lessened the milk to 3/4 cup and then added 1/4 cup of ricotta cheese. i omitted the oil. sooooooo good! i find that if you let the batter sit for a few minutes before you make the pancakes, the batter will fluff up a bit. i will definitely make these again.

Moist Cinnamon Rolls

I really liked these cinnamon rolls. I don't know if it's my breadmachine or not, but the dough cycle took over an hour, so for me, the entire process was closer to two hours. I liked the caramel on the bottom of the rolls, and I added an icing to the top when they were hot. I also added a lot more cinnamon than the recipe called for, even adding some to the caramel in the bottom of the pan. I like cinnamon :)

Aunt Mary's Banana-Chocolate Chip Bread

I thought that this recipe was just okay. I doubled the recipe, which may have contributed to my results, but overall I thought that it wasn't banana-y enough, and I even added extra banana. I would put this somewhere in between a banana bread, and a banana cake... It was good for what it was, but I think I was looking for a moister, more banana bread-type recipe. One plus, however, was that this recipe didn't have the obvious baking powder taste that I find so many banana breads have. It was edible, and everyone liked it, but it wasn't as good as I had hoped (or craved).

Strawberry and Feta Salad

wow. i loved this salad. it looked great and tasted great! i used a fancy lettuce mixture instead of just romaine. i really liked the toasted almonds. i will definately make this again.

Basic Truffles

i made these as christmas gifts, they are so easy, but look like they took a lot of time and effort! i covered mine with melted milk chocolate, which gave a bit of a cool effect (dark truffle center, lighter chocolate outside). i also added a bit of brandy to them, yet the flavor of the brandy wasn't very strong, next time i think i shall add more than just a splash. thanks for the recipe, they were a great success, especially for my first time working with chocolate.

Absolute Mexican Cornbread

i made this for a vegan potluck that i went to (everyone was vegan, except myself). i used egg substitutes (1tbsp. water + 1 tbsp. cornstarch and a dash or baking soda per egg), i also used vegan margarine and vegan soy cheese. but it was still amazing! it was a big hit! i can't wait to make it with real cheese, butter and eggs!! (i halved the sugar and butter, like everyone suggested) this is especially great because i was looking for a mexican cornbread recipe.. and i've found it!! thanks!!!!

Heavenly White Cake

i had high hopes for this cake, but was sadly disappointed. i found this cake to be too heavy, despite adding the extra 1/2 cup of milk everyone else suggested.. and from the words of my sister: "this cake has no taste" - yes.. i too found it to be bland.. i will return to my hunt for a good white cake recipe :(
