About this Cook
I am a working mom, wife, and volunteer my time to the Boy Scouts so my schedule is very packed. Quick, nutritious dinners are a priority for me and my family.
My favorite things to cook
I make the BEST Beef Stroganoff from scratch. I love to cook, however, I do NOT bake. Yuck. Hate it.
My favorite family cooking traditions
My husband insists on a VERY traditional Thanksgiving dinner, but for Christmas I get to be creative. From this site, I've tried Gouda-Stuffed Pork Chops and Rouquefort Steaks (see my reviews of them).
My cooking triumphs
Everytime we entertain and I pull off a magnificent 4 or 5 course dinner with beautiful presentation I feel quite proud of myself.
My cooking tragedies
The first year I cooked Thanksgiving dinner for my parents the heating elements went out on the oven! To this day they both honestly believe I forgot to turn on the oven but the lights were all on indicating everything was working. Besides, my husband was in charge of the turkey.;)He ran to the store & we had deli turkey meat. The bird was done 15 min after my folks left that afternoon! :(

Fluffy French Toast
Now that we've concurred how to make the best waffles, we've been attempting to make the best french toast and I think this is the winner for our base. I doubled the cinnamon because we LOVE it so much and add a splash more vanilla. Fabulous recipe!

Mushroom and Leek Soup
Super easy and very tasty. I used low sodium chicken broth and a packet of Swanson's chicken flavor boost. Delicious! I will enjoy this on sick days, for sure!

Grilled Portobello with Basil Mayonnaise Sandwich
Wow. I almost didn't make the mayo as I don't typically put mayo on my burgers, but I think this added to perfection! I made a lot more marinade mix than the recipe called for to help coat the top.
