Best in Show Blackberry Cobbler

I've made this twice and it didn't turn out very good either time. I followed the instructions carefully both times so I don't know why it wasn't good. Will not try a third time.

Jordan Marsh Style Blueberry Muffins

These are great. I followed the recipe exactly with the exception of using butter instead of shortening and added some grated lemon rind. They are light and not heavy at all as some muffins are. I got 12 regular size muffins and 9 mini muffins. I will be making these again when blueberries are in season. Thanks Ann!

Roasted Brussels Sprouts

My husband loves brussels sprouts and these were delicious. The loose leaves turned very dark but they were sooo good, nice and crispy. I did start the oven at 425 for about 15 minutes then turned it down to 400 for another 15 or 20 minutes.

Slow Cooker Cilantro Lime Chicken

So good. My husband is not a fan of chicken but he really loved this. I did add drained and rinsed black beans. I served it wrapped in flour tortillas with a dollop of sour cream.

Cajun Chicken Pasta

When I read the recipe, it really didn't sound good but after reading the reviews decided to try it. I had most of the ingredients on hand except the mushrooms, so went for it. Well I have to say, it was absolutely delicious. My husband loved it even though he is not a big fan of chicken. I had a little leftover for lunch but would have liked to have more. It was just as good reheated. I will make this many more times but will add the mushrooms. Great recipe!

Morning Glory Muffins

Fantastic. I've been looking for a recipe like this for a long time. I finally found it in this. It does take a bit of work (but I finally got out my food processor for the grating) so it was fairly easy. I will definitely make again.

Delicious Rosemary Bread

I made this for the third time yesterday. It has a beautiful crumb and taste. The only problem I have with it is the crust is not "crusty". I used the egg wash, last time threw in ice cubes and when I take it out of the oven, the crust becomes soft. I don't know if it is supposed to be soft or if I am doing something wrong. So yesterday I made one round loaf and the rest into hamburger buns. The buns were great and I will use this recipe again for buns. The bread also toasts wonderfully. I hope someone can tell me what they think of the crust because otherwise it is a great bread.

Mexican Casserole

This was a great, fast and easy recipe. Followed recipe except added some chopped onions to the ground meat. This makes a lot and will feed a large family and is fairly cheap to make. My husband loved it. Since we are empty nesters we have leftovers which I am sure will not go to waste.

Little Lemon Meringue Pies

Had two mini (4-1/2') pie plates (bought at World Market) and doubled the recipe. It was very good and it made two small pies. We shared one last night and will share the other tonite. It was perfect for us empty nesters who really could never eat a whole pie. My husband is not as big a fan of lemon meringue pie as I am but he enjoyed it too. I will probably use the crust recipe again for other fillings as it was just the right amount for my two little pie plates.

Creamed Chipped Beef On Toast

Made this last night and it sure took me back to the good old days. This is the same way my mother made it. The only change I made was to use bacon grease instead of butter. I did splurge on the jar beef. The jar is now larger than I remember it but I believe it had the same amount of beef. I guess they want to make you feel you are getting more for the high price.We ate it on plain toast which is what my mother always used. It is a real comfort food.

Delicious Ham and Potato Soup

Followed most of the recipe but did add a couple of finely diced carrots, used 1 cup milk and 1 cup 1/2 & 1/2. I also added fresh thyme since my plant needed to be cut back. It was a great way to use up leftover Easter ham. I did sweat the vegetables before adding the water to continue the cooking process. This was absolutely delicious, although it is quite rich. That might be because I used 1/2 and 1/2, but sometimes a splurge is okay. With only the two of us, we had leftovers for lunch and still have a small amount left for tomorrow. I will definitely make again, especially when I have leftover ham.

Old Fashioned Onion Rings

These were great. Next time I am going to add a little corn meal to the bread crumbs. I also used half panko. I want to try this recipe and technique with zucchini and mushrooms.
