Blueberry Zucchini Bread

This recipe was SO good! Followed recipe pretty closely with the exception of cutting back to 2 cups of sugar (which was plenty) and used more like 2 1/2 cups of shredded zucchini as I wanted to use up what I had. I only had 2 regular sized loaf pans, so I increased the baking time to 1 hour and 15 minutes. This was SO moist and flavorful...my husband is hoping I don't give the 2nd loaf away!!! Will certainly be making again!

Ratatouille

This is absolutely, hands-down, the best vegetable dish I have ever tasted. The only thing I changed in the recipe was I omitted the green pepper and used an orange and yellow pepper for color. My husband said..."I'll definitely eat this again". Thanks Lynette. Definitely a keeper!

Beef Nacho Casserole

I took so many suggestions from other reviewers, that the only ingredient that remained the same in this recipe was the ground beef. These were my substitutions: 1 can Rotel (diced tomatoes with green chilis), 1 can Fiesta or Mexicorn, 3/4 sour cream, 1 packet taco seasoning, 2 cups corn chips, 2 cups mexican shredded cheese. It had a little zip to it, but if our 2 year old wasn't eating it, I would have used "hot" taco seasoning. My husband and I topped our servings with sour cream and jalepeno slices with extra corn chips on the side. We both had seconds. This will be made again and again! I give my recipe 5 stars! Thanks reviewers!

Herbed Chicken Pasta

This was a very simple, flavorful pasta dish. I added a can of italian style diced tomatoes with the juice and fresh asparagus. Will make this again.

Honey Glazed Ham

I made this for our Easter dinner yesterday. It was wonderfully flavorful and juicy. I made a 5 lb. ham and only made 1/3 of the glaze recipe. I had just the right amount. I served the drippings from the ham as a syrup for the ham after it was sliced. Will definitely be adding this to my holiday recipe file.

Easy Pork Chop Casserole

Well, my husband and I didn't think this dish was that wonderful. It wasn't bad, but it wasn't anything to write home about. I changed the soup to roasted garlic cream of mushroom for added flavor as another reviewer did, but it still didn't do anything for us. Also, my boneless pork chops were done in 1 hour.

Slow Cooker Beef Stew I

This was an extremely good beef stew. I added a 14 oz. can of stewed tomatoes for added flavor. And, after it had cooked for about 5 hours, I noticed that the gravy was thinner than I wanted it, so I added 3 T. tapioca. By the time I was able to serve dinner, it had cooked for a total of 12 hours....the meat was so tender that it was beginning to shred when I was dishing it out. My husband had 2 large bowls. Will definitely make this again.

Joey's Peanut Butter Cookies

These cookies turned out really good. I used the Pampered Chef medium scoop to drop onto cookie sheet to eliminate the stickiness. Also sprinkled them with sugar after I criss-crossed with fork. Mine turned out chewy on the inside and a little crisp on the outside...just perfect. They were a hit at my office.

Peach Cream Pie I

This pie was wonderful. My husband and I loved it. I did add 1/4 t. of cinnamon to the filling. I also added a top crust with melted butter brushed on and a mixture of 1/4 c. sugar, 1/4 t. vanilla and a dash of cinnamon pressed on top. I will say that before I baked the pie, I was skeptical about the oven temperature of 300...my pie was not done in 1 hour, it took 1 1/2 hours. When I make this again, I will try increasing oven temperature to 350 and bake for 1 hour.

Awesome Slow Cooker Pot Roast

Very tender roast. I used a 4.5 lb. boneless pot roast seasoned with salt, pepper & seasoning salt, cooked on low for around 11 hours. Changed the ingredients to 1 can golden mushroom soup, 1 can roasted garlic cream of mushroom soup, added a small can of sliced mushrooms and substituted beef broth for the water (I did use the dry onion as called for). I will say that the gravy did need to be thickened with corn starch before serving, but it was the most flavorful gravy and tender roast I have ever served. Made beef manhattan's for dinner the next night with the leftovers. Will definitely make again.

Ortega® Fiesta Bake

This dish is sooo tasty and easy. I prepared this for a Girls Night Out "Fiesta Night", and it was a huge hit. I used Fiesta Corn and substituted jalapenos for the green chiles....very spicy and good. Have already made this twice and loved it both times.

Baked Green Tomatoes
