Tips- Freeze the truffles after rolling them into balls for about 45 minutes until they are firm. This makes it much easier to dip in chocolate. Then, instead of using semi sweet chocolate, try using white chocolate. It tastes much better that way. Also, you could try a mint version, using mint chocolate cookies and half of the mint filling and follow the recipe from there. Keep the chocolate-dipped truffles in the freezer until serving time. If you don't want to dip them in chocolate, you could sandwich one in between two square "snaps" pretzels and they are also good.
