Hot Bean Dip

I used 2 cans of El Paso fat free spicy beans - eliminated the taco seasoning and the hot sauce - cooked on stove top instead of oven then put in slow cooker as I was taking the dip to a party - I have also used plain refried beans and substituted 8 oz. of pepper jack cheese for the Monterey Jack (again, no hot sauce) - without the taco seasoning you get the full benefit of the bean & cheese flavor!

Chocolate Refrigerator Cookies

I baked these cookies this morning and they came out perfect and delicious! The only thing I did different was to use 3 squares of the unsweetened chocolate instead of 1 1/2 - gave them a more chocolatey flavor. The consistency of the dough made them very easy to slice after chilling - no wasted dough from broken slices -am adding the recipe to my list of Christmas cookies for next year

Easy Mexican Casserole

I made a similar casserole years and years ago - I always put the chips on top then sprinkled the cheese over the chips - I didn't crush the chips either (optional) - when you do it this way the chips turn out crispy not soggy! I'm giving the recipe 5 stars even before making it because this recipe is virtually the same as mine (except for the sour cream & black olives & I just used dark kidney beans but the concept is the same) and when I made it my kids and husband loved it!

Oatmeal Chip Cookies

I made these cookies this a.m. and they are awesome! Only thing I did different was to use 1/2 cup good margarine and 1/2 cup butter flavored Crisco and instead of chocolate chips I added a bag of Hershey's cinnamon chips - the chips gave the cookies a delightful flavor.

Hamburger Salad Sandwiches

I made this for book club and it was a big hit - I gave it 5 stars even tho I did "tweak" it a bit - used 1 TBSP mustard and 2 TBSP catsup - also added some REAL bacon bits and used half of chopped onion in skillet and half in finished salad. I consider a recipe 5 stars if the basic combination of items work and I only tweak personal taste in one or two flavors

Blueberry Buckle

This recipe is awesome! I doubled it and baked in 10x15 pan - only change I made was to add more blueberries - have already passed it on to friends who have tried it and they agree that it is awesome
