Superfast Asparagus

Really good, super fast. Don't add any salt since the Cajun seasoning already has a bunch. Don't add the Cajun seasoning while the asparagus is sitting in a baking sheet in the hot oven it rises up and gets in your eyes.

Baked Dijon Salmon

Skip the butter next time - don't know if it's necessary. This was really delicious. I was a bit worried about pairing salmon with mustard, but it was really delicious. I really enjoyed the pecan and breadcrumb topping with the salmon. I'll make this many many times in the future.

Slow Cooker Italian Beef for Sandwiches

Used a 2.5lb roast and beef broth instead of water but otherwise followed all the measurements exactly. By the time it was done cooking (did pull it out 2 hrs before done, shred the meat and put it back in) the meat had soaked up all the liquid and it was super moist and flavorful. Really good.

Orange Cake

This is really delicious. I've made it several times and everyone always loves it. As many people have suggested, I used yellow cake mix, vanilla pudding, and way more orange extract and orange rind than specified. I added both extract and rind to the batter, the icing, and then for garnish sprinkled rind over the top. I find it's even better the more orange flavor you give it.

Raspberry Peach Crumble

I use about 6 medium peaches, no raspberries. Be sure to use unsalted butter otherwise it comes out WAY too salty. Accidentally used sweetcream butter once and it was so salty and so buttery it was inedible. Use unsalted butter and leave out the salt as well. I use about 50% more crumble - 2x is too much. Also, if you don't pre-treat the peaches it'll come out really runny and your crumble will be all mush. Chop up the peaches, add sugar and cinnamon and let it rest for about 30min stirring occasionally. Then drain out the juice, add 1T of cornstarch and microwave about a minute or so until it turns into a thin paste. Add it back into the peaches. I also use a little less sugar on the peaches, less white sugar in the crumble, all the brown sugar and about 1/3 less butter even though I add 1.5C of oats.

Great flavor but be sure to squeeze the moisture out of the cauliflower. I had to add potato flakes to mine because they started off too runny.

Sweet Pork for Burritos

Fantastic! Used 1 cup of brown sugar and didn't bother to puree the salsa. Suspect diet soda would work fine. Ate on tortillas with chopped green onions and cilantro. Cooked on low over night and then a few more hours on low with the seasonings. Let it sit overnight in the fridge and then heated it up.

Double Tomato Bruschetta

I thought this was outstanding and all of my guests really liked it as well and made comments about how good it was. I'm not even a big fan of tomatoes but I really liked this. Used dried basil because I couldn't find fresh at the store and it was still fine.

Mushroom and Leek Soup

I tried this with beef broth first and didn't like it much--it was too heavy and greasy. But I liked the ingredients so tried again with chicken broth and absolutely loved it. Just fantastic! I made some slight modifications to the recipe--I used a full 8 oz package of mushrooms and two stalks of leeks (this is probably about what the recipe calls for). Used a 50oz can of chicken broth and added about 2.5 cups of water. Will make it exactly the same way next time.

Baked Whole Cauliflower

I cut the cauliflower in half and simmered/steamed it in a closed pot of chicken broth. Then transferred the cooked cauliflower to a baking dish. I re-used the pot to melt the butter and add the other seasonings. Chopped the cooked cauliflower up into smaller pieces in the baking dish and then tossed in the breadcrumb mixture. I'm not sure now how much extra the chickenbroth added. Next time (for sure there will be a next time) I think I'll use the same cooking technique but with just water. This was delicious but I did end up adding a little extra garlic salt and oregano sprinkled on top before eating.

Low Carb Cauliflower Leek Soup

I roasted the cauliflower until lightly browned, used probably 3x the garlic (about half of which was roasted garlic), added some onion flakes, a little ground red pepper (be careful, it doesn't take much to make it really spicy) and 6 cups of chicken broth. Then I added a couple tablespoons of cornstarch to cold skim milk (about a cup?) before adding to the soup. Let it return to a boil and then removed from heat and blended. Tried it tonight and it's awesome. Can't wait to try it tomorrow after the flavors meld even more. With the reduced broth and addition of corn starch it is quite thick and smooth.

Asian Lettuce Wraps

This recipe is really good. I like the filling on top of rice as well. However I would strongly suggest doubling the sauce otherwise it comes out a bit dry

Chicken Enchiladas V
