Banana Bread I

This was so delicious! It was slightly crunchy and carmalized on the outside and really soft on the inside. I did add some cinnamon and nutmeg like others had suggested. I made two batches and it perfectly made 6 muffins and 1 large loaf of bread.

Quick Gnocchi

I made these with the Spicy vodka tomato cream sauce and I thought they were just delicious. I tasted gnocchi for the first time at a restaurant and was just dying to make it myself. I'm so pleased that I can now!

Penne with Spicy Vodka Tomato Cream Sauce

I used this sauce with the recipe for Quick Gnocchi and it was just delicious. I was really impressed with the depth of the sauce--it was just like from a restaurant!

Irish Chicken and Dumplings

For a real meat 'n' potatoes meal, this is quite good. It's hardy with lots of vegatables and very tasty. I'd suggest using more celery, onions and carrots and fewer potatoes, though.

Soft Christmas Cookies

I'm not a fan of sugar cookies simply because I'm not a fan of crunchy cookies. But these were really delicious. The flavor was just great. I overcooked them a bit--but I could still see the potential deliciousness of them! They looked undercooked even when I now know they were done. So be sure not to go by eye so much--follow the recipe. I'll try again and follow the recipe more closely. Hopefully I'll end up with the fabulous soft cookie I know it can be. :)

Anna's Chocolate Chip Cookies

These spread out really big and got really flat for me. Plus I overcooked them slightly and they got a bit too crunchy for my liking. And they were too greasy. Aside from all that, they had a really delicious taste. I used half choc chips and half heath bits. It was a nice touch. I'm definately going to try this recipe again.

Grilled Shrimp Rice Noodle Bowl

I really like Vietnamese food, and I was really looking forward to this dish, but I did not enjoy it at all. The first bite or two were okay, but I couldn't eat much more than that. We picked the shrimp out, at those, and threw the rest out. Sorry.. not too good.

Baked Dijon Salmon

This was really delicious. I was a bit worried about pairing salmon with mustard, but it was really delicious. I really enjoyed the pecan and breadcrumb topping with the salmon. I'll make this many many times in the future.

Oatmeal Peanut Butter Cookies

These cookies were good, but kind of tricky to make. I thought they were just okay, but I brought them to a party and everyone seemed to really like them. I used a rounded measuring teaspoon of dough for each cookie (less than I usually use) and absolutely could not cook them any longer than 10 minutes. I had to take them out of the oven much earlier than before they looked browned. They became much harder as they sat, so taking them out of the oven while they were still slightly mushy made them soft and chewy later. Letting them reach the "slightly browned" point was much too overcooked. They got a really poor taste when they were crunchy. And they definately need some more flavor. I'd suggest using toffee pieces or chocolate chips. They're not particularly great by themselves. They flatten out quite a bit, so a rounded teaspoon of dough made for a nice sized cookie. They also made much more than 4 dozen.

Pecan Pie Bars I

These were really good. I liked having pecan pie in bar form. I did find, however, that I needed to cook the crust much longer than specified in the recipe so that it didn't taste raw. And since this was my first time making them the edges got really chewy since I cooked them longer to get the crust right. Otherwise, very tasty.

Orange Cake

This is really delicious. I've made it several times and everyone always loves it. As many people have suggested, I used yellow cake mix, vanilla pudding, and way more orange extract and orange rind than specified. I added both extract and rind to the batter, the icing, and then for garnish sprinkled rind over the top. I find it's even better the more orange flavor you give it.

Pork Chops for the Slow Cooker

I first made this recipe in a sauce pan real quick since I didn't have much time. I liked it. But when I tried to make it in the slow cooker it became much too concentrated and I really didn't like it at all. So I'd highly suggest the shorter cooking time.

Potato and Egg Casserole

I was disappointed by this. I felt like the ratio of eggs to potatoes was way too low. I ended up only using half of the potatoes called for because they didn't all fit in the baking pan. The sauce was okay but in general I felt this dish was way too rich. And I'd suggest slicing the potatoes ahead of time and then cooking because slicing them when they're already cooked was more difficult and messy and they ended up not being tender enough after baking. Too much work for not an incredibly tasty dish.

Best Beef Dip Ever

This was just okay. I found that the au jus was way too oily with not enough flavor. I let it cool and skimmed a lot of the fat off and then it was a little better. The beef turned out nice and tender and was pretty tasty by itself without the sauce.
