Cinnamon, Spice and Everything Nice Cookies

Did not like these at all. Thought they were dry and lacking in flavor. Might be better with some kind of icing or frosting?

Chayote Squash Side Dish

Key Lime Cheesecake I

This was great. I went the lazy route and used a store-bought graham cracker crust. Still turned out delicious. I used 24 oz (3 bricks) of cream cheese as the recipe calls for rather than 4 like many reviewers suggest. I thought it was the perfect amount - and actually the filling was even a bit too much for the crust. I probably should have bought the deep dish graham cracker crust. The only change I made to the recipe was 1/2 cup of lime juice rather than 2/3 cup. Either probably would have been fine. The lime flavor is pretty faint the first day or two but gets stronger after it sits in the fridge for a few days.

Chocolate Sandwich Cookies II

They were pretty good, nothing too special. However they were very fast and easy with only 3 ingredients and store-bought frosting. I strongly recommend undercooking them otherwise they do end up hard and not nearly as good. I made them smaller than in the instructions and only baked them for 7-8 minutes but I should have done even less still.

Korean Cucumber Salad

I use rice vinegar, 1 tsp of white sugar, a few splashes of sesame oil, red pepper flakes, sliced white onion and a little pepper. I skip the sesame seeds - they're too much trouble to toast and I find it a weird texture when mixed into the liquid. Might be better if they were just sprinkled on top when serving.

Cucumber Salad I

Based on other's suggestions I didn't use the full water that was suggested and I feel it ended up too vinegar-ie. Regardless, I think this needed a little more sugar or something else to cut down on the acidity and something else to add more flavor.

Black Bean and Corn Salad II

This was really delicious. I found several recipes on this site that were all very similar so I took the pieces I liked from those and modified this recipe slightly. I used one full bag of frozen corn, only 1 can of black beans, half the oil suggested, used the juice from 3 limes and added in 1 teaspoon of sugar. Use red onion instead of green since that's what I had. I really enjoy how fresh and tangy this is. And I love the addition of the avocado for a creamy extra touch.

Honey-Ginger Grilled Salmon

I liked this recipe but also feel like there was too much soy sauce in the marinade. I used the left over marinade and reduced it to a sauce, drizzled it over the top before eating. I also cooked this in a foil pack at 375 for about 40 minutes. Turned out very good. I'd also suggest marinating longer.

Honey Ginger Grilled Salmon

I cooked this in a foil packet which was really easy (375deg for about 40 minutes) and the flavor was nice. But I would suggest marinating it longer and I also reduced the marinade afterwards in a saucepan and used it as a thicker sauce which made the flavor stronger. Too much soy sauce in my opinion (the citrus and honey were overwhelmed), but still a good recipe.

Garlic Mashed Potatoes Secret Recipe

These were good, but I had to deviate from the recipe a bit because I used the frozen "steam and mash" potatoes and the store was almost out so I got one plain and one garlic. So I modified the garlic amount a bit (and I cut way down on the #servings) so I winged it a bit. I roasted the garlic and I think that was a nice change. A bit too much garlic I added but they were still very good.

Sugar Coated Pecans

These were great and surprisingly easy to make. Not quite as good as the trader joe's ones, but pretty close. Got lots of requests for the recipe. I also made the modification of 2tsp water, 1 tsp vanilla rather than the full tblsp of water and doubled the cinnamon.

Raspberry Peach Crumble

I use about 6 medium peaches, no raspberries. Be sure to use unsalted butter otherwise it comes out WAY too salty. Accidentally used sweetcream butter once and it was so salty and so buttery it was inedible. Use unsalted butter and leave out the salt as well. I use about 50% more crumble - 2x is too much. Also, if you don't pre-treat the peaches it'll come out really runny and your crumble will be all mush. Chop up the peaches, add sugar and cinnamon and let it rest for about 30min stirring occasionally. Then drain out the juice, add 1T of cornstarch and microwave about a minute or so until it turns into a thin paste. Add it back into the peaches. I also use a little less sugar on the peaches, less white sugar in the crumble, all the brown sugar and about 1/3 less butter even though I add 1.5C of oats.
