Pumpkin Bread III

My mom always made a pumpkin bread with nuts and dates, baked in coffee cans, so when I couldn't find her recipe, I decided to try this one. Couldn't find metal coffee cans (?), so I tried mini-loaf pans. Worked perfectly, the recipe made 6 loaves. Based on other reviews here, I also made the following changes: used 3/4 c oil and 1/4 c applesauce; changed to 1.5 c brown sugar and 1 c white sugar. I also added chopped pecans and dates. Bread was delicious, will definitely make this again!

Balsamic Roasted Pork Loin

Everyone really enjoyed this! I made the following additions suggested by other reviewers here: garlic to the marinade; 2 sliced onions under the pork; 1/4 c water and 1/4 white wine for additional liquid in the pan and threw in some baby potatoes and carrots. Everything was moist and flavorful and best of all, it was super easy!

Snow on the Mountain Green Beans

Thought this would be another ho-hum grean bean recipe, but I listened to the reviews and tried it. Loved that the beans were firm, and the combination of the lemon and feta worked so well, even my cooked vegetable-adverse daughter scarfed them down!

Basil Chicken and Pasta

I was wondering what to do with a rotisserie chicken I had on hand when this recipe came through the Daily Dish e-mail. Perfect timing. This recipe is definitly a keeper. I followed some of the options other reviewers noted and loved the outcome. Added a shallot, sliced mushrooms and about 1/4 cup diced red pepper to the chicken and garlic. For the sauce, I did double as suggested, but I used the 3/4 c milk, 1/3 c butter and 1 T flour instead of heavy cream. I couldn't find fresh basil so used the dried. It was wonderful! I could hardly wait for the pasta to cook after sampling the chicken mixture. I did add peas to the pasta, and that didn't add much for us, but didn't detract. Will be making this again!

Blueberries n' Cheese Squares

Reading these reviews, I'm not sure what I did wrong. It tasted okay, but had to be scooped out of the pan. No way I could serve it at a function. Will have to look for another recipe.
