Juicy Roasted Chicken

Very good as is. Used potatoes for elevation off foil covered pan. Takes longer than instructed. Recommend more seasoning, maybe onions inside?

Baked Chicken and Zucchini

Chicken was good. I added onion and garlic to increase flavor but veges still lacking something. More cheese? More herbs? Cream of something soup? Definitely worth repeating and tinkering with the recipe.

Laura's Quick Slow Cooker Turkey Chili

AWESOME!!! I followed exactly except for cutting back chili powder to 1 1/2 T... end result was still a little spicy (but still very good...I'm a wimp) so next time I will cut red pepper flakes in half. Cook time in my crockpot was 4 hr on low.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Moist but needs more banana flavor. My changes: 2 eggs, 1/2c vanilla lowfat yogurt, 1/4c veg oil, 3/4c light brown sugar, 1/2 tsp vanilla, 2 bananas, 2c white flour, 1tsp b.soda, 1/2tsp salt, 1/2T cinnamon, 1 1/2c sliced fresh strawberries

Chocolate Chip Banana Muffins

My changes: 1 3/4 c white flour, 3/4 c white sugar, 1tsp b.powder, 1tsp b. soda, 1/2tsp salt, 1 egg, 1/4c veg oil, 1/2c vanilla lowfat yogurt, 2T milk, 1tsp vanilla, 2 bananas, 3/4c mini choc chips, 1/2c chopped walnuts.****** update: flavor gets even better after a couple days! very good!! did well being frozen, too.

Rhubarb Coffee Cake

Turned out too moist. Substituted sour cream with vanilla yogurt. Used 4 cups mixture of rhubarb and strawberries. Good flavor but masked rhubarb. Too sweet.

Good potential but I found this to be a little heavy on salt and lime. This surprised me because I'm always adding more salt to my guacamole! Need to tweak this one.... not any good 24hrs later :(

Slow Cooker Texas Pulled Pork

VERY GOOD! Used 2 lb pork shoulder with bone in. High heat 4 hr, low heat 45 min and was done. Used white wine vinegar (had on hand).
