I decided to make this one night when my mother was busy and I felt like cooking something new.
Like the other reviews, I added some vegetables: chopped up carrots, green onions, a little red onion, mushrooms, celery, and two cloves of garlic, which I sauteed before putting in the soup. I also followed the advice of one review and used 2% milk instead of heavy cream, 6 tablespoons of butter, and only 1/2 cup of flour.
I didn't use the seasoning packet from the rice boxes, and I'm glad I made that choice. Instead I used some basil, celery salt, lemon peel, parsley leaf, a small pinch of oregano, and possibly a little bit of dill weed, all along with the salt and black pepper the recipe calls for.
When I sauteed the chicken, I added some pepper to it just to add a little flavor to the meat itself.
Overall, this soup was a big hit with the family. Out of a giant pot of soup, only one serving was left over. I will definitely be making this again in the dead of winter.
