Baked Kale Chips
I actually don't like kale very much. That is, until today. I absolutely love these baked kale chips. I sprinkled them generously with gourmet salt and pepper, and I thought they were just wonderful! What a great way to indulge in such a healthy vegetable!!

Lemon Square Bars
I love lemon bars, so I can't explain why I've been too intimidated to make them myself. I must have looked at this recipe for three days before I could actually drum up enough courage to make them. The only change I made was using light brown instead of white sugar in the filling, because it was all I had. I worried that I had ruined the bars, because the color was off from the sugar. However, the taste was a heavenly mixture of sweet and tart, with a delicate, buttery crust. They are delicious! I guess this was the recipe I was looking for because I did it! I made yummy lemon bars! If I can do it, you can too!

To Die For Blueberry Muffins
This muffin was okay, but in my opinion, not great. I had an issue with the topping being too greasy, like another reviewer mentioned. Also, I just don't like the texture and taste. I prefer more true blueberry taste. It was overwhelmed by the cinnamon. I know what I'm looking for in my mind, but I can't seem to find the right recipe. I'll keep searching for a recipe that rocks my world! NOTE: To be fair, only after I baked the muffins did I notice that the fresh blueberries I used were a bit sour, which I'm sure affected the "blueberry" taste. Also, my freshly-ground Siagon cinnamon was probably too overpowering. Maybe I should use less. I'll try this recipe again, and perhaps also use less butter in the topping.
