Mama's Asian Chicken and Rice

Reviewed: Oct. 20, 2012
Delicious-I doubled the sauce but didn't double the crushed red pepper. It was sweet for the kiddos but still spicy enough for my husband. If you like General Tso's Chicken this is a nice, unfried version. Making the recipe again this week!

Artichoke & Spinach Dip Restaurant Style

Reviewed: Dec. 16, 2011
A great appetizer to make!! The only change I made was on the suggestion of others to put the full 8 oz. of cream cheese in. I put it in a small crockpot to keep warm & it went quickly. Very good flavor!!!

Awesome Red Wine Pot Roast

Reviewed: Dec. 10, 2010
All the flavors tasted really well. If you bake this in the oven you really need to babysit it & check on it often. I had to add more liquid several times because it had all been absorbed. The meat was sooooo tender & the taste was wonderful.

Slow Cooker Chicken and Dumplings

Reviewed: Oct. 2, 2010
This was yummy!! I followed a few of the other reviews & used chicken broth instead of water, I seasoned the chicken up w/salt, pepper, & a little poultry seasoning. And I only used 1 can of biscuits. It was eaten up at my house very quickly by all.

Perfect Turkey

Reviewed: Dec. 7, 2009
This was my first attempt at a whole turkey. It turned out awesome and tasted just as good. It wasn't dry, and it was easy to make. Great directions and the house smelled wonderful when it was baking. Will DEFINITELY use this recipe again!!!!

Peanut Butter Haystacks

Reviewed: Jan. 14, 2009
So simple & a great addition to Holiday baking. I omit the peanuts from mine because of personal preference but we always get compliments from people asking what those "delicious, peanut butter, crunchyn things" were.

Storybook Gingerbread Men

Reviewed: Jan. 14, 2009
Having never made or even eaten a gingerbread cookie ever these were fantastic. My kids really wanted to bake some for Christmas cookies and I thought that they would be tricky. But they turned out wonderful & were very soft, but not so soft that they fell apart on you. Follow the directions & you can't go wrong. The ONLY thing I did differently was I had to add just 1-2 tbs. more of water, These will definitely be a Christmas tradition at our house.

Baked Pork Chops I

Reviewed: Dec. 21, 2008
DELICIOUS!! Today was exceptionally cold for us -20 so this was an excellent choice to make: warm & hearty & filling! I was nervous about my 10 year old & 4 year old liking the sauce, but they LOVED IT!! This one is DEFINITELY a keeper & will be made in our house again. I didn't change anything from the recipe & the porkchops had great flavor & the breading was nice & crisp. I made sure my olive oil was hot before putting the pork chops in so that they could get a nice crunchy coat on them prior to baking & they were perfect!

Supreme Scalloped Potatoes

Reviewed: Nov. 20, 2008
We use our food processor for the perfect sliced potato. These turned out WONDERFUL!! They are always requested now at family events. We don't skimp on the cheese in this recipe just because the cheesier the better.

Taco Bake

Reviewed: Oct. 9, 2008
This was good & my family really enjoyed it. I changed this recipe to a one pot meal though, as opposed to using 1 pot, 1 pan, & 1 baking dish. I cooked the ground beef & onion as directed. Then I added in 1 1/2 cups water, taco seasoning, tomato sauce & the pasta UNCOOKED all together. I brought the entire thing to a boil, then covered & reduced for 15 or so minutes. Then I stirred in the green chiles & 1 1/2 cups shredded cheese. Then I topped remaining cheese & covered with lid & let cheese melt. I didn't use the oven at all and it still tasted great.

Fiesta Pinwheels

Reviewed: Oct. 9, 2008
I made these once & they're now requested all the time. I made a few changes: light sour cream, light cream cheese, 2% shredded cheese. And I'm not an olive fan so I omitted those. I also added in grilled chicken to it. They're a great appetizer for a party.

Skillet-Grilled Catfish

Reviewed: Oct. 9, 2008
Delicious!! We're always looking for new ways to cook fish. This had a nice "fried" taste but not the fat & grease. My ONLY change I made was I used Extra Virgin Olive Oil instead of butter for the healthy Omega 3. We'll definitely fix this again.

Fresh Cherry Crisp

Reviewed: Jun. 18, 2008
This is my first year of sour cherries and my first attempt at a cherry crisp. It turned out WONDERFULLY!! I didn't have enough for the full recipe so I cut it in half and cooked it in an 8 x 8 glass baking dish. I took the others' suggestions about the shortening & instead used 1/3 cup butter when I cut the recipe in half. I also sprinkled a bit of cinnamon on top before I baked it. I'll DEFINITELY make this again.

Chicken Souvlaki Gyro Style

Reviewed: Jan. 30, 2007
This chicken was wonderful. We are going to do chicken kabobs with this next time. You could taste the marinade throughout the chicken & it wasn't overpowering. I followed a different recipe for the Tzatziki Sauce so I can't rate that but the chicken was wonderful.

Warm Greek Pita Sandwiches With Turkey and Cucumber-Yogurt Sauce

Reviewed: Jan. 30, 2007
I can really only rate the cucumber sauce because I used a different recipe for the meat, but this sauce was AWESOME!! It took some prep time but it was yummy. I could've just dipped pita bread right in it and ate the whole thing. I followed the recipe exactly and all the flavors were wonderful. We will definitely make this again.

Quick and Easy Lemon Pie

Reviewed: Jul. 27, 2006
LOVED IT!! It was so yummy and very filling and easy to make. I let it refrigerate for about 4 hours before serving and it set up fine. But, I did notice the next day it had set up even more. When I make again I will let refrigerate overnight. Even my husband who doesn't like lemon ate two slices. Thanks!

Easy Cheesy Chicken I

Reviewed: Jul. 27, 2006
This was a GREAT recipe find!! It was nice having baked chicken without having to turn the oven on. The chicken was very juicy & tender. I added a package of frozen broccoli the last hour of cooking and served the chicken over brown rice. It was yummy, fast to put together, and easy cleanup...a must for any busy mom (or dad)!!

Pasta Primavera with Italian Turkey Sausage

Reviewed: Apr. 14, 2006
I made this tonight and it turned out great. I love that it was filled with fresh veggies, and low-fat meat but it was so tasty. I didn't do any altering to this recipe except for top it with more parmesan cheese upon serving. A great meal!!!

Banana Oat Muffins

Reviewed: Nov. 29, 2005
These turned out pretty good overall. I changed some things up based off of the reviews. I decreased the oil to 1/4 cup, added 1/2 cup of applesauce, & added 1/2 tsp. cinnamon. I sprinkled brown sugar on top of them before baking. I baked them at 350 degrees for 20 minutes. They were pretty tasty and the oats gave it a nice texture! I'll make these again.
