Home-style Tacos al Pastor (Chile and Pineapple Pork Tacos)

Awesome! Did a 24 hour marinade and will make these again soon!! I got 33 street taco sized out of my batch. They were a hit with everyone even though I added an extra chile and adobo sauce. I use crushed pineapples & blended 1/2 into the sauce. I was eating the sauce w/ a spoon right out of the pot.. it was so good! Serve w/ onions, radish & cilantro. Some of my guests wanted cheese to I used finely shredded monterrey jack.

Creamy Italian Slow Cooker Chicken

Very simple and easy slow cooker meal. Served ours over some jasmine rice. Don't use store bought Italian seasoning mix WAY too salty, make your own or use a packet of Hidden Valley Ranch mix. I added maybe 2/3 of the package but I did use 6oz of cream cheese in the sauce. Served it with some steamed fresh broccoli.

Jimmy Dean Sausage Cheese Balls

I make these every year for either Christmas Eve or New Years Day. I use panko bread crumbs instead of "baking mix". I always mix 1 package of regular with 1 package of hot Jimmy Dean sausage because I found they lack a little kick if you use all regular. Make them ahead of time and freeze then take out about 15 mins before needing to put in the oven. Spread out into a single layer so they thaw quicker. I keep them fairly small so they are more of a pop 'em size. If you go smaller adjust cooking time to 15 minutes! I have had people ask for something to dip them in but I generally dont serve with a dip. If anything I use a spicy brown or dijon mustard. TIP: If you bought regular sausage and want some kick add 1 teaspoon of cayenne pepper for 2lbs of sausage. Mix well!

BBQ Dry Rub

Scaled it down to do a test batch on a couple chicken breasts. I added some garlic powder and a dash of cumin. No heat on this one but it was very good with an overnight marinade. Will definitely prepare it in larger quantity next time I do a large pork butt for pulled pork.

Grilled Buffalo Wings

I have been making a similar recipe for years but I use Franks Red Hot sauce. Chicken comes out soo much better. Put the finished wings on a platter to serve family style and garnish with celery and carrot sticks around the edge. Toss some crumbled bleu cheese over the chicken too.

Pork Brine

Brine was great, pork was very flavorful. Left mustard out because I didnt have any and did not feel like buying more. For those whom say it is too salty you either forgot to rinse the brine off before grilling or you didnt use Kosher or Sea salt. This is originally an Alton Brown recipe and he never uses the iodized table salt we were used to growing up.

BBQ Pork for Sandwiches

Very easy pulled pork recipe. I normally use my own bbq sauce but Bullseye Memphis style sauce was on sale for 99 cents when I was shopping. Came out quite good. Next time around I am going to use a pork butt and slow cook overnight. Then mix with a Carolina vinegar based bbq sauce I got from a buddy.

Southern Dill Potato Salad

Made it for a birthday bbq last weekend and it was a hit! I only used about 3 or 4 eggs because 5 just seems too much. I also did a little s&p on the potatoes before mixing in the dressing. Didnt have Dijon mustard so I had to use normal mustard but next time I will pick up some Dijon for sure.
