I used this recipe as "inspiration" and it was delicious! I couldn't find sun-dried pesto so I used basil pesto. I sauted onions, spinach, mushrooms and garlic in olive oil until done then added diced cooked chicken and a tablespoon of pesto and removed from heat. I spread the rest of the container of pesto on two pizza shells. I then topped each pizza shell with the onion,spinach,mushroom chicken mixture then topped with feta, tomato slices and a sprinkle of parmesan cheese and baked for about 10-15 minutes.
After the pizzas cooled I cut into squares and served as appetizers. Huge success.... everybody loved it and I received several requests for the recipe.
