Portobello Penne Pasta Casserole
I used pasta made from mushrooms and skipped the extra mushrooms. So good! For those who don't mind the taste of mushrooms but don't like the texture--it was the perfect solution. I also used a bag of fresh spinach instead of frozen. Just let it steam above the mixture.

Curry-Style Chicken and Spinach
So yummy! I served it with a mixture of rice and quinoa. Also, used fresh spinach instead of frozen. It will steam if you put it over the chicken after the broth is boiling. Followed others suggestions and used an onion sliced up instead of onion powder. Put it in with the chicken to get the full flavor. So easy and delicious!

Avocado Salad
I don't normally like avocado as a main ingrediant but this is delicious!!! I made it for a small dinner party and everyone commented on how good it was. I left out the cilantro (since I really don't like cilantro) and used lime juice. Salt and pepper aren't neccessary. It was a wonderfully refreshing starter salad.
