Irresistible Irish Soda Bread
I've made this four times now and it comes out fantastic. So easy! You can also add raisins to your personal taste - I used 1/2 cup dark raisins and 1/2 cup golden raisins. The only criticism I have is that when I baked it in the 9 x 5 loaf pan as specified, the batter puffed up too high and spilled out - fortunately I noticed and slid a cookie sheet underneath to catch the goo! After that I used a slightly larger loaf pan, 10 x 6, and it came out perfect.

Boardwalk Quality Maple Walnut Fudge
For this recipe, I used Baker's white chocolate morsels and the fudge came out great! Nobody could believe I made it.

Apple Jicama Coleslaw
This was really, really good - even without the corn nuts (whatever they are!) It will now be my go-to slaw recipe. Two things: I disagree that it must be consumed on day one. We managed to keep it for several days and it was just as delicious. Also, on Day Two I made Quinoa and Black Beans from this site, put it in soft corn tortillas and topped it with some leftover Apple Jicama Slaw and it was awesome!
