Italian Breaded Pork Chops

This was pretty good, they were not as moist as i had hoped, as i used center cut chops, so next time i will cut the cook time down a little, i didn't dredge in flour first so the nice coating easily slid off so i will try that. i also loved the garlic and left in skillet. all in all i liked it with a little season salt and fresh ground pepper..a winner

It was very very easy and moist, i made it with fried rice even with just garlic it was delish! Will try with chicken next time and add some onions

Fish in Foil

This was great. I used fresh trout. I would use a tad less olive oil and no lemon for my man..i however love lemon also added a little old bay and garlic it was wonderful! i will make again and again

Aunt Carol's Spinach and Fish Bake

I LOVED this! As usual i read the majority of the comments before i try something new. And i agree with altering a bit. I sprayed my dish with butter flavored Pam, in a skillet i sauteed half of a large onion and 3 heaping tablespoons of garlic, as we love garlic, and a couple pinches of kosher salt with a little water and Pam olive oil and butter spray. I lightly squeezed the thawed spinach, added about 1/2 cup of monteray jack, cheddar and 1/4 c pepper jack and the rest fresh Parmesan, i pat the cod dry and used old bey fresh ground black pepper, a pinch of oregano basil, kosher salt onion powder and garlic salt on both sides like a dry rub, mixed as directed except i used 1 teaspoon seasoned breadcrumbs in the spinach and 1 for the out side. placed my fish on top and added the remainder of cheese and breadcrumbs with a little fresh chopped parsley, backed at 350 for about 35 mins as my fish was medium thick, removed foil and placed on broil for about 10 minutes the house was smelling flavorful and delish! I love the way the ingredients blended so well together, i'd never tried this kind of dish before and i am so glad i did. i truly value this website and all the comments! It did remind me of stuffing and for those who hate spinach it doesn't taste like spinach! I think think chicken breasts or breakfast chops would do well with this dish or cubed ham chunks or shrimp ontop with the fish! Thank you Aunt Carol this dish was filling, and 10 stars in my book!

Spinach Chicken Parmesan

After reading what others wrote once again i decided to go with the majority. I added about 2 T prepared chopped garlic with the butter and used both green onion s and yellow onions. I seasoned with chicken with the Italian spices, garlic salt, kosher salt, and fresh ground pepper. After sauteing i removed from pan and added a teaspoon of butter and olive oil Pam. I tossed my pounded out seasoned chicken breast with extra parm and about 3 T seasoned bread crumbs. Seared them in the pan a couple minutes each side, removed from pan and added garlic onion mix and proceeded to the sauce. I did double the sauce and used all the spinach, you have to squeeze the heck outta the spinach as the frozen holds allot of liquid. I will try it with fresh wilted next time. I placed the chicken on the bottom. As the sauce begin to bubble i removed from heat, i added about 1/4 c more of the skim milk and about the same of Parmesan, i used fresh shredded for the recipe , added a dash or two of caynne pepper and a dash of nutmeg. spooned over the 4 large breasts, sprinkled with a little more parm, and tossed about 1/2 c panko bread crumbs all over baked at 350 about 32 mins, then put on broil about 5 mins it gave the panko and parm topping a little crumb crunch. IT WAS AMAZING! i served it with garlic mashed potatoes and the extra spinach. This is the second spinach dish i've tried in as many nights, and my family thinks the new menu rocks!
