Guacamole

YUM! This was my first attempt at making guacamole EVER, and it worked out great. I had extremely ripe avocados...I needed to make something! This was easy to do and very flavorful. I think I inadvertently ate about 1/2 of it already...I should probably slow down. I can see eating this with chips (which is what I was doing) but I also like to use it on a burger, or as a spread in a sandwich. I put a dash of paprika in it as well, to Hungarianize it...and actually that was a nice little addition, so I am pleasantly surprised. I can't wait to make this again!

Banana Muffins II

These were great. I love that this recipe is so simple, with on-hand ingredients. I actually only had 1 extremely over-ripe banana, so I added in 2 nectarines (in place of 2 more bananas) that had also seen better days. Since the fruit overall was SO ripe, I cut back the sugar to just 1/2 cup, fearing it might be too sweet...and I found it to be just right. Otherwise, everything stayed the same. I had 1 right out of the oven...it was so good. Then I simply had to have another with a cup of tea immediately after LOL. I'm doing my best to not have a third! What a delightful recipe...will make this one again!

Mushroom Rice

This is a super easy and delicious recipe. I didn't have chicken broth, so I just used water and added some salt & pepper as well. I had more mushrooms than called for and I think I pretty much used more of everything, but it just made it more flavorful. This can be a great side dish or main meal. Thanks Jen!

Mexican Rice

I just made this and am enjoying it for dinner right now. This is delicious and very easy to make! I am vegetarian, so instead of ground beef I used one of those soy meatless ground "meat" packages that simulates ground beef and it came out wonderfully. I did not have chili powder on hand, so I used a bit of cyan pepper instead. These were the only deviations from the original recipe, and it is a meal in itself. Serve it hot off the stove, sprinkle on a lot of shredded cheese, let it get melty and enjoy. It could be a good side dish, but I'm eating it in a bowl on its own. I also plan to use some as burrito filling. Excellent dish.

Pasta with Asparagus

I just ate a bowl of this right now! I added in a little onion and garlic to spruce it up and some bell pepper I needed to use up. This is very tasty and VERY easy to make. I also had some avocado that I needed to use up, so I cubed little pieces and sprinkled it on the top...loved it!

Nana Dot's Irish Soda Bread

Not exactly the Irish soda bread I remember as a kid...I had an Irish friend in school and her mother would always make it, however this is very delicious and easy to make on its own. Currants aren't the easiest thing to find, but I did eventually find them and they are quite delicious in this bread or on their own. This bread also keeps well in the fridge - there was no way I could eat all of it on my own (even when I halved the recipe to get just 1 loaf) however it stayed tasty even after a week had gone by. I will surely make this again in the future :)

Bread Pudding II

Believe it of not, I used old hot dog and hamburger buns that were reaching the expire date...and this turned out wonderful! I gave some to my boss (who has a real sweet tooth) and he loved it! I had him try to guess what type of bread it was and he never figured it out LOL What a treat and super easy to make! This was my first attempt at bread pudding and I will definitely make this one again.
