Cool Off With Gelato-Infused Cocktails

I know – you gravitate toward beer during the summer to quench your thirst. But don’t give up on cocktails!

My spin for a refreshing drink on a hot summer day? Add some gelato. There are a variety of cocktails you can modify to cool down – here are three of my favorites.

Based on a recipe by Tyler Florence, this simple yet delicious cocktail was the first drink my husband, Kevin, and I experimented with (and which sparked the idea) :)

Icy Lemon Vodka Cocktail
– 2 cups water
– 1 1/2 cups sugar
– finely grated zest of 1 lemon
– 2 scoops of lemon gelato
– 4 cups crushed ice
– 1 cup of vodka

In a small saucepan, combine the water and sugar and simmer over moderate heat to make a simple syrup. Once the sugar is dissolved, remove from heat and add the lemon zest. Allow to cool in the refrigerator, about 30 minutes. Add the lemon gelato, crushed ice, vodka and 1/2 cup of the simple syrup mixture to a blender and mix until slushy. Pour into 4 cocktail glasses, garnish with a lemon slice and enjoy.

On the hunt for another drink to make with the lemon gelato, we turned to our favorite staple – the margarita. An easy-to-make cocktail, you should be aware this one is slightly sweeter.

Lemon Margarita
– 1 scoop of lemon gelato
– 1/2 cup crushed ice
– 1 1/2 oz. lemon juice
– 2 oz. tequila
– 1 oz. Cointreau or triple sec

Add the gelato, ice, lemon juice, tequila and Cointreau into a blender and mix until slushy. Rim an old-fashioned glass with salt (if you prefer), pour the mixture in to the glass and serve.
Finally, I was inspired by a Pina Colada and tweaked it using a coconut gelato – very tropical and thirst-quenching when the temps reach the 90′s.

Tropical Coconut Cocktail
– 1/4 cup crushed ice
– 1 scoop coconut gelato
– 1 oz. dark rum
– 1 oz. coconut rum
– 1/2 cup pineapple (canned or fresh)

Add the ice, coconut gelato, dark rum, coconut rum and pineapple to a blender and mix until smooth. Pour into a highball glass and garnish with a slice of pineapple. You can also rim your glass with sugar, if preferred.

Are there any cocktails that help you beat the heat? Share them here or at http://savinghappyhour.com/2011/07/08/cool-off-with-gelato-infused-cocktails/< . Cheers!
