Make Your Own Sparkling Summer Cocktails

Mango cocktail to a decadent POMtini, you’ll find the perfect recipe to satisfy your summer cocktail craving.
Pairs well with a spicy carne asada or seafood gumbo.
With mangos in season, you can use fresh or fresh-frozen fruit. Stores like Whole Foods, Raley’s or Trader Joe’s also have them readily available in the frozen section. TIP: Add ice cubes to this recipe if using fresh mangos.
– 3/4 cup vodka (I like SKYY or Smirnoff)
– 1/3 cup Cointreau
– 2 cups mango
– 1/4 cup lime juice
– sparkling wine or champagne
Combine vodka, Cointreau, mango and lime juice in a blender. Blend until smooth. Pour into cocktail glasses, 2/3 full. Fill remainder with sparkling wine or champagne. Lightly stir to mix and garnish with a slice of lime.
Try this with chicken & vegetable skewers or grilled shrimp.
Watermelon is at it’s best right now and this is a great festive drink. Keep in mind, this is a sweet cocktail – tone down the sweet by using more of the cranberry soda (my husband Kevin’s preference).
– 1 cup seedless watermelon
– 1/4 cup lemon vodka
– 1/4 cup sparkling cranberry juice
– 1 tbsp. Cointreau or triple sec
– 2 limes
– 3 ice cubes
– sugar, for rim
In a blender, combine the watermelon (preferable frozen), vodka, cranberry juice, Cointreau or triple sec, and ice cubes. Pour into a martini glass rimmed with sugar. Float a squeeze of lime on the top and garnish with slice of lime.
I served this with ravioli in a red sauce and a garden salad – it was a surprisingly good match for all of the flavors.
This tasty and decadent cocktail is a perfect quick drink using POM Pomegranate juice.
– 1 oz. POM Pomegranate juice
– 1 1/2 oz. vodka
– 1 1/2 oz. sparkling cranberry juice
– 1/2 oz. sour mix or freshly squeezed lime juice
– 1/2 oz. simple syrup
– ice cubes
Pour all ingredients into a cocktail shaker, add ice and shake well. Strain into a chilled martini glass and garnish with an orange slice (if you’re handy, you can spiral your orange slice).
