Rice Zucchini Muffins

I subbed quinoa for the rice (still used rice flour) and honey for the sugar. Added raisins and walnuts to mine and chocolate chips to my boys' once they were in the pan. They came out a bit too moist on the bottom, and stuck to the wrapper, so I need to work on adjusting the other ingredients (maybe less applesauce?) to get a more muffin-y texture. But the taste is DELICIOUS! I just went GF and was craving something "bready".

Salmon Quiche

I wasn't sure if I was going to like this, but I had leftover sockeye to use up. It was SO yummy! Used a ready-to-roll-out refrigerated crust. Didn't use the blender, just whisked the milk, eggs, spices(added some cayenne because I love it in quiches), and cheese. I used shredded cheese: half mozzarella and half medium cheddar, and threw in a bit of feta. Layered the onions and fish in the bottom of the pie crust, then poured the egg and cheese mixture over it, sprinkling some reserved cheese on top. Also baked it about 10 mins longer until it started to puff a bit.

Chocolate Zucchini Cake III

I followed another reviewer and replaced half the oil with applesauce, and reduced the sugar to 1 1/2 cup, and used chocolate chips instead of walnuts (to make it kid-friendly). I've made it twice, once in a bundt pan and once in a 9 x 13. Both work great! I also used some dark chocolate cocoa in my second try! The kids liked it better with icing, but devoured it despite knowing it had "yucky zuccini" in it!

Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto

Yummy! Changed a few things to use what I had on hand. Used regular onion instead of shallot - not sure if that made a difference or not. The pesto was really garlic-y, so a little goes a long way! I also used almonds and pecans because I didn't have walnuts. For the sauce, I roasted one red bell pepper instead of using a jar - still made plenty. Baked the fish so I didn't have to drag out the grill. I'm sure the grill flavor would only add to the yumminess! We served it with white rice made with olive oil and added cilantro. Looks fancy, tastes delicious!
