Gourmet Pumpkin Pie

I baked a pumpkin and pureed it fresh for this recipe. Without having read any other reviews, I actually added some pumpkin pie spice after tasting the filling (just a scant 1/2 tsp.) I used a store bought crust. MAKE SURE you use a deep dish pan! * Hubby said this was the best pie EVER.* I can't believe how light (almost mousse-like) it is. Can't wait to make it again for the holidays.

Baked Applesauce

This is the first thing I make when the apples come into season and we've made a day trip to the country orchard. I find that with a nice mix of "baking" apples, I can reduce the sugar. I also leave the chunks really large to retain some "lumpiness" in the sauce. The vanilla is a must! I make a huge batch in a roasting pan to share with neighbors. THE BEST!!!

Coconut Milk Rice Pudding

I'm sorry to pooh-pooh Chef John's recipe, but I tried to make this three times and it never came out. After it was chilled, the rice seemed hard and the pudding did not "set." I tried cooking it longer, until we felt the rice was "done," and it turned into a starchy thick goo.
