Stuffed Green Peppers

Great recipe, though it uses way too much cheese. I used maybe 1oz of shredded cheddar per pepper, and it was plenty. Also made with brown rice, to make it a little healthier. But over all a great dish enjoyed by my whole family.

Downeast Maine Pumpkin Bread

Wonderful! I'm taking away a star because this recipe should have brown sugar - I made it both an written, and subbing out half the white with brown, and the addition of the brown sugar is great. I also subbed out half the oil with applesauce, because holy cow that's a lot of oil! Still a moist, flavorful "bread" (really it's cake)

Too Much Chocolate Cake

Made this for a group dinner and everyone raved about it! I took the advice of other reviewers and decreased the oil to 1/2 cup, and added 1/3 cup milk, and replaced the water with strong coffee. My oven was wonky, and so this cake ended up sitting in a 250-degree ish oven for 3 hours - and it was STILL amazing!

Ricotta Cheese Pancakes

Delicious! Going by some other reviews, I used real sugar and 2 egg whites instead of splenda and egg substitute. Unless you can't have sugar at all, 2 tsp for the whole recipe is really tiny. I also used part-skim ricotta and added cinnamon, vanilla and pumpkin pie spice. It might sound like I changed it a lot, but really it's just subbing in real ingredients and adding some spices. Yum!

Delicious! Going from past reviews, I added extra cinnamon, a tsp of vanilla and pumpkin pie spice. I also subbed the oil for applesauce. Will definitely make again

Quick Chicken Piccata

Absolutely delicious! I basically tripled the chicken and quadruped the sauce because we had guests, and everyone raved about it! The only changes I made were to replace the cayenne with onion powder (we didn't want it spicy) and add garlic to the sauce

Best Spanish Rice

Wonderful and easy recipe. I upped the onion because we love onion, and added chili powder and paprika. Took a star away because the recipe should have called for more seasoning Warning: be very careful when doubling the recipe - your water quantities might be different. To be honest, I wouldn't double it - I don't think it works as well.

Best Chocolate Chip Cookies

Absolutely fantastic recipe. Made exactly as instructed except left out the nuts, and got rave reviews. I cooked in several batches, and the cookies that came out with the most fantastic texture - wonderfully chewy on the inside with a tiny bit of crispiness on the outside - were the ones I took out just after they had puffed up and collapsed on themselves. Will be making these over and over, thank you for this recipe!

Blonde Brownies I

Excellent! I followed the recipe exactly (except for the walnuts, but that is more preference), and they came out chewy, sweet, and wonderful. For anyone who's making them, they did take closer to 30 minutes to bake, but they were worth the wait!

Black Bean Vegetable Soup

This was fantastic! I didn't have stewed tomatoes so I used a small can of tomato paste, the stock and half the beans to make the liquid part, and it turned out wonderfully. It is packed with flavor. Will definitely make again.

Easiest Peanut Butter Fudge

Good recipe, but wayyyy too sweet. After reading reviews, I cut down sugar to 2 c. brown, 3 c. confectioners', and upped the PB to 1 cup. Still a bit too sweet, even for a rich dessert like fudge. However, the recipe seems to adapt itself very well to changes, so next time I will use natural peanut butter, decrease the confectioners' and decrease the butter to 6 tbsp. However, I think the base recipe could make a fantastic peanut butter fudge frosting Some of the tips I collected that were useful: - Sift your confectioners' sugar and use an electric beater to mix it in - Start timing the two minutes AFTER is starts boiling - Line the pan with buttered parchment paper for easy removal and less cleanup Btw, if you use the quantities I said above, the whole pans comes to 5,000 calories, 120 calories per serving if you cut it into 42 squares.

Dark Chocolate Cake II

Fantastic! Made (almost) exactly as directed, just made it non-dairy by using soy milk. Moist, rich but not too heavy, classic chocolate cake. I also loved how quickly it came together.

Broiled Tilapia Parmesan

Fantastic! Based on some of the reviews, I cut the butter down to 2 TBSP and added some paprika. I also sprinkled a little salt, pepper & garlic powder on the fish before broiling. I think you could easily make it even healthier just by decreasing the amount of cheese mixture per fish - it's thick and flavorful, and I found a little goes a long way. Watch the broiler carefully, this cooks FAST

Oatmeal Peanut Butter Cookies

Awesome! After reading some of the reviews, I made the following changes: - Use all margarine instead of 1/2 margarine and 1/2 shortening - Cut down on white sugar to 1/4 cup - Add 2 cups chocolate chips - Doubled oats They were great, nice PB taste and really soft and chewy. Next time I will completely omit the white sugar and not double the oats

Easy Garlic Broiled Chicken

Delicious! I used 1/2 as much butter and 4 extra pieces of chicken. Definitely recommend that you follow the part of the recipe and cook some of the chicken separately (ie not in with the sauce). Will make this again
