Shrimp and Crab Enchiladas

This is a very easy recipe. I feel that it needed a kick. I would suggest using Pepper Jack cheese inside and regular M.Jack on the outside. Or just use all of Pepper Jack. It reminded me of the seafood enchiladas that I had in New Market, very good. I would make this again. It seems like a fun recipe to experiment with. Thanks!!

Fra Diavolo Sauce With Pasta

This was a very good meal. Quite different from what we are used to and a nice way to use shrimp & scallops together. I only used 1/2 the pasta, but feel that we should have used all of the canned tomatoes (2 cans), it needed a bit more sauce. We also didn't use so much red pepper flakes. I can't do too much heat. But, all in all, this was very very good. Worth making again.

Sausage, Apple, and Cranberry Dressing

Made this dressing to take home for a visit with my sons. They are young, so they are picky. I wasn't sure the cranberries would be a hit in the dressing, but each of them loved it. I would suggest a bit more chicken stock however and less apples. Since I already had a sausage with sage in it (Neese's), I left out the additional and it worked out well with the flavor. This recipe made more than enough for 5 adults. I will be making this again when it's time to visit our parents. :) Thank you for posting.

Blackened Shrimp Stroganoff

I didn't follow this recipe to the letter, I thought there was too much work in the cooking. I saute'd the vegies all at once, added the chicken broth, watered down some cornstarch, added it to thicken, then added the shrimp to simmer. I let the family decide whether or not they wanted sour cream. I tasted the combination of the vegies and thought it was very good without the sour cream. I had also used yolk-free egg noodles instead of fettuccini. It was outstanding. Even my 16 year old liked it, very unusual to like peppers in anything, but he did. I will surely be making this again. Thanks Linda!

Tantalizingly Tangy Meatloaf

This recipe was very good. I used the advise of another person by combining apricot preserves with pineapple. I'm not too big on pineapples, but this came out just right. My kids loved it as well. I will be doing this recipe again.

Gourmet Sweet Potato Classic

This is my families favorite sweet potato recipe so far. I've made this twice now and it looks like it's a lock-in when it comes to Thanksgiving. I would recommend this recipe to anyone who loves creamy sweet potatoes without the marshmallows.

Creamy Deviled Eggs

This was a nice change from the standard deviled eggs. I used instant minced onions and only half of what the recipe called for. They get softer and have less of a twang than real onions. My kids liked the change and said would do them again sometime along with the standard deviled eggs. No problem for me, these were good.

Sesame Parmesan Zucchini

My kids loved this recipe and they aren't real big on zucchini. I made it as a side with my Thanksgiving Dinner for something alittle different. We felt that this recipe had a hint of an oriental taste to it which gave the meal a nice twist. I will definitley do this one again.

Bread Bowls

I cut this recipe in half and made for Zuppa Toscana Soup. I also used the bread machine using the dough cycle. The bread came out perfectly, tasted wonderful and the texture was great. I used the bowls again a couple of days later for chili. Fantastic! A keeper!!

Pseudo Sourdough for the Bread Machine

I thought this bread was good. Soft on the inside and a bit crusty on the outside. I didn't use the barley flour. I didn't get the tange as stated in the introduction, but enjoyed it nonetheless.

Baked Seafood Au Gratin

This is an outstanding recipe, should have made more. My whole family loved it. I love seafood anyway and this was a nice one to combine all of my favorite into one meal. Wouldn't have this one alone, not filling enough. We had a nice salad with this and some biscuits, very nice together.

Hash Brown and Pork Chop Casserole

This recipe was very good (something different). It was easy to make and the hash browns were creamy. I used sharp cheese instead of mild and felt that the hash browns could use the extra kick. My boyfriend felt that the pork chops could have used some sort of seasoning while cooking in the oven. I feel that this recipe gives you room to experiment.

Texas Pork Ribs

We wanted to make this recipe but didn't have as much time to spare as it called for. We used the rub and let it marinade in the fridge for about 4-1/2 hours. Then we let them cook for about 3 to 3-1/2 hours instead of 4. I will tell you that they were excellent. There were none left! I loved the rub, didn't need the BBQ sauce. I will no doubt make these again.

Guinness® Corned Beef

This was absolutely delicious. We used 2 pounds of meat and one hole beer (Guinness Stout). We cooked it in a crock pot for 3 hours, turning every hour. DELICIOUS!

Crab Appetizer Napoleons

These were very good. Just right for a light appetizer during a ball game. I don't care for onions, but the green onions gave it the kick and crunch it needed. I used old bay instead of paprika, but feel a sprinkle wasn't enough, so next time I'll incorporate it in the cream cheese mix. Will be doing these again.

B and L's Strawberry Smoothie

My children and I felt that this recipe was very refreshing. Not too much sugar which enhanced the flavor of the strawberries. We may experiment with the fruit, but not the added ingredients. This recipe is a real treat.

Baked Orange Roughy Italian-Style

This recipe was very good. We didn't have the Romano and doubled up on the Parmensan. We feel that fresh Parmesan would have given it a richer taste. We also would have prefered to use fresh fish, but the frozen worked just fine. This is a nice change for fish. Would do this one again.

Twice Baked Sweet Potatoes

This was an easy way to make sugared sweet potatoes. I would give it five stars, but it was too sweet for me. I also think that next time I would use a different cheese other than cream cheese. I've had sweet potatoes with cheddar and it doesn't take away any of the natural sweetness of the potato. I will do this again, but I will be tweeking it for better results.

Apple Butter Pork Loin

This was a good recipe for pork. The smell in the house reminded me of Thanksgiving, yum! We mixed the sauce ingredients and put it on the tenderloins immediately. Covered and baked for almost 2 hours. The sauce remained on top and we got a little juice at the bottom, which I think helped keep the tenderloin juicy. Thanks for posting! Will be doing again.
