Broccoli and Cheddar Soup

I made this for my grandfather who is 81 and fell down the stairs. he was in really bad shape and said the my soup was the best soup hes ever eaten and that I was a genius (LOL!) it was SO good, I ended up making a second batch for myself and brought it to work for everyone in the office to taste. EVERYONE loved it. There are a bunch of vegans/vegetarians in my office, so instead of using chicken broth the second batch I used vegetable broth, and it was exactly the same taste. I also used fresh broccoli instead of frozen broccoli for both batches, and that was the only change I made the first go around (and that's not a very big one!) this soup is great as is, I didn't even need to add extra cheese or anything. Will DEFINITELY make this again, maybe even put it on the menu at my diner!

Fisherman's Quick Fish

Really like this recipe, it has a nice crunch and flavor. I feel it is missing some type of acidity however. Next time, I'm probably going to marinate it in lemon juice instead of the dressing, which will also cut down on fat. But the recipe as is is tasty and easy and definitely worthy of 5 stars. I like the diversity this recipe offers, allowing people to use different types of dressing and chips.

Easy Chocolate Chip Cookies

Very, Very easy. I found that they were better after a couple days, they became way chewier. And also my brother seemed to like them a lot with cake icing on top. Not the best cookie, but very easy and decent if you're ever in a bind to show up somewhere un-emptihanded.

Cake Balls

I made this with yellow cake, chocolate frosting, and instead of the chocolate coating in the recipe I made my own chocolate ganache and it turned out to die for. I made it for a friend's birthday, and she is normally a very picky eater but they were gobbled up so fast by everyone at the party. Instead of sprinkles, I dusted with powdered sugar and threw around some sliced strawberrys for a beautiful presentation. Very easy, and very delicious.
